Madora Done Right: A Crunchy Taste of Tradition 🇿🇼 Oven Cooking
They say you never forget your first bite of mopane worms, and sometimes you wish you could 😅. If you’ve ever tasted amacimbi/madora that were rushed, undercooked, or just plain chewy, you know the struggle. But when cooked with patience and care, this humble delicacy transforms into a crunchy, smoky, flavor-packed dish that pairs perfectly with sadza.
Here’s how I make mine, just like my aunt taught me during school holidays in Hurungwe.
🧂 Ingredients:
🐛 2 cups dried mopane worms (madora)
🧅 1 onion, chopped
🍅 2 tomatoes, diced
🌶️ Optional: chili flakes (kamhiripiri)
🧂 Salt to taste
🛢️ Cooking oil
🔥 Method:
1. Manually inspect your madora, remove any unwanted guests 😃, when done continue.
2. Soak the madora thoroughly in cold water to remove sand and bitterness, I soak for 30 minutes 😉.
3. Rinse, rinse, rinse, and rinse again, then add water into the pot to cover and boil for 30–45 minutes until soft and rehydrated, add your salt and chili while boiling in the quantity of your choice.
4. Let the water finish, then fry in oil until a little dry and seasoned well, no need to make them crispy at this stage.
5. Remove from the pot, fry your onions until crispy, and your tomatoes until blended well with the onion.
6. Add your madora back and stir until mixed well with the onion and tomato paste.
7. Place the madora in an oven tray, set the oven at 180° on grill.
8. Let it cook for 15 minutes, stir a bit, then turn off the grill and let them cook only from the bottom at low temperature, approximately 60°, for the next 15 minutes.
