Lemon creams biscuits
Ingredients
For the biscuits:
- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 3/4 cup heavy cream
- 1 large egg
- 1 teaspoon grated lemon zest
- 1 tablespoon freshly squeezed lemon juice
For the lemon cream:
- 1 cup powdered sugar
- 2 tablespoons unsalted butter, softened
- 2 tablespoons freshly squeezed lemon juice
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. Add cold butter to dry ingredients and use a pastry blender or fingers to work butter into flour mixture until it resembles coarse crumbs.
4. In a small bowl, whisk together heavy cream, egg, lemon zest, and lemon juice.
5. Pour cream mixture over flour mixture and stir until dough comes together.
6. Turn dough out onto a floured surface and gently knead a few times until it comes together.
7. Roll dough out to about 1 inch thickness.

9. Place biscuits on prepared baking sheet and bake for 18-20 minutes, or until lightly golden.
10. Allow biscuits to cool on a wire rack.
11. To make lemon cream, beat powdered sugar, butter, and lemon juice until smooth.
12. Split cooled biscuits in half horizontally and spoon lemon cream over bottom half. Top with top half of biscuit.
