Sheera is simple and classical Indian dessert recipe made with semolina, ghee and sugar, it is similar to sooji ka halwa. The dish in my house is not regular, or either made on kids request for breakfast and can be served as an accompaniment to a savory dishes like upma, khara bhath.
This recipe is a keeper!!
Hope the recipe, tips and tricks help people who do not know to make sheera or struggle to make a good sheera.
This recipe is good for 3-4 people with a small appetite
For roasting:
6 tsp ghee / clarified butter
7 cashew / kaju, cut into bits
½ cup rawa / semolina / suji/Bombay rawa
other ingredients:
1 ½ cup boiling water, always thrice water
½ cup sugar
¼ cup ghee / clarified butter
Few strands of kesar soaked in a tbsp of water
¼ tsp Cardamom powder
Method
Firstly, heat a pan add 4 tsp ghee and roast cashew nut bite on low flame.
Once it turns golden brown, add rawa and roast for 5 minutes on low flame.
To the roasted rawa slowly add boiling water stirring continuously.
The rava will absorb all the water and turn a lump-free mixture. Now add 1 tsp ghee.
Now add ½ cup sugar and continue to stir.
Now add kesar water (if you don't have it use a few drops of food colour if you want orange colour or leave it as it tastes good)
Cover and simmer for 5 minutes making sure rawa is cooked completely.
Mix well making sure everything is well combined. Finish with the last tsp of ghee for best flavour. Mix well switch off the flame and cover for 5 minutes.
Finally, enjoy sheera.
Aps notes:
Firstly, roasting rava helps to prevent from forming a lump and texture turns out to be good
You can add milk in place of water to make rich sheera, we generally don't add milk as it is added during Satyanarayana Pooja.
Furthermore, adjust the amount of sugar to your preference.
Always soak kesar in water rather than milk as it gives away the best colour, a tip received by the kesar vendor.
Proportion is 1/2 ghee:1 rawa: 1 sugar : 3 water
I wouldn't suggest using food colour but if you don't want to use kesar then use a few drops of food colour to give that orange colour.
Finally, sheera recipe tastes great when served warm and soft.
