1. Heat 1 cup oil until smoke point and let it cool
2. In a bowl add 250 gram chopped Onion, 1 tbsp Ginger garlic paste, 3 slit green Chilli, 2 dry red chilli, 1 Bay leaf, 1 inch Cinnamon, 3 greenCardamoms, 1 black cardamon, 3 Clove, 2 red chillies, 1tsp cumin seeds, 1 tsp coriander seeds, 2 mace
4. Add 1/4 tsp Turmeric powder, 2 tsp Coriander powder, 1 tsp Red chilli powder, 1/2 tsp Garam masala 1 tsp salt, 1 tsp red kashmiri powder,
5. Pour in 80% of cooled mustard oil
6. Mix everything well
7. Now add in 500 gram Mutton, 2 whole Garlic,
8. Coat mutton nicely with the masala and mix everything well
9. Pour the remaining mustard oil in Handi and coat inside
10. Place in the marinated mutton inside Handi and spread it evenly
11. Close the lid of the Handi and tightly seal using dough
12. Prick the seal using a toothpick so that pressure inside Handi can release with ease
13. Place the Handi on smaller burner and cook on medium flame for first 10 min
14. Then lower the flame and cook for 1 or half an hour
15. After every 15 min shake the Handi well so that the mutton inside is evenly cooked and it prevents mutton from sticking to the bottom of Handi
16. After an hour, let the Handi sit for atleast 15 min
17. Open the lid and finish off with some chopped coriander leaves
18. Tasty Ahuna Mutton is ready. Serve it with rice / roti and Enjoy!!
