Beef fajita sliders

Beef strips 1/2 kg
Baking powder 1 tsp
Chili flakes 1 tsp
Chili powder 1/2 tsp
Cumin powder 1 tsp
Garlic powder 1/2 tsp
Onion powder 1/2 tsp
Salt 1 tsp or to taste
Marinate beef with all above ingredients and let it sit for 10 to 15 minutes.

Oil accordingly
Onion 1 medium
Capsicum green sliced
Capsicum red sliced
Capsicum yellow sliced

Fajita spice mix:
Black pepper powder 1/2 tsp
Paprika powder 1 tsp
Cumin powder 1 tsp
Garlic powder 1/2 tsp
Onion powder 1/2 tsp
Oregano 1 tsp

Heat oil then add marinated beef and let it get seared on one side for 4 to 5 minutes then start sautéing.
Sauté for 8 to 10 minutes on medium heat until all water dries.
Add onion, capsicum, fajita spice mix, tomato paste, mayonnaise and siracha/hot sauce.
Sauté for 2 to 3 minutes on medium heat. Set it aside.
In baking dish add burger buns, sliced cheese, beef fajita mix, shredded cheese and siracha sauce. Add buns and brush with melted butter.
Bake at 180C for 10 minutes or until cheese melts.

Mutton Tahiri

Mutton 1 kg
Oil 1/2 cup or accordingly
Cumin seeds 1 tsp
Cardamom 3 to 4
Black cardamom 2
Cloves 5 to 6
Black pepper whole 1/2 tsp
Cinnamon 1
Bay leaf 1
Onion 2 to 3 medium(250 g)
Ginger garlic paste 2 to 3 tbsp
Red chili powder 1 tsp or to taste
Chili flakes 1 tsp
Turmeric powder 1 tsp
Salt 1 tsp or to taste
Tomato 1 big or 2 medium
Yogurt 1/2 cup
Dried plum(aaloo bukhara) 6 to 7 or accordingly
Coriander leaves handful
Mint leaves handful
Green chilies 6 to 8 or to taste
Rice 750 g
Water 4 to 5 cups or accordingly
Salt 1 tbsp or accordingly

Heat oil then add cumin seeds, cardamom, black cardamom, whole black pepper, cinnamon, cloves and bay leaf. Let it crackle then add sliced onion and sauté until light golden.
Add meat and fry for a minute.
Add ginger garlic paste and sauté for a minute.
Add red chili powder, chilli flakes, turmeric powder and salt. Sauté for a minute.
Add tomato and yogurt, cook until tomato softens and oil separates.
Add dried plum and water then cover and cook until meat is tender.
Once meat is tender keep flame high and cook until oil separates.
Add coriander leaves, mint leaves, green chilies and lemon juice.
Add washed and soaked rice.
Add water and adjust salt.
Cover and cook until water is almost absorbed.
Add some ghee then cover and cook on dam.
Once rice is fully cooked rest for few minutes before serving.
Enjoy with raita and salad.

Chicken skewers with veggies

Potatoes 2 medium
Paprika powder 1 tsp
Salt 1/2 tsp or to taste
Black pepper powder 1/2 tsp
Olive oil 2 to 3 tbsp
Onion 1 big

Cut potato and add in baking dish. Add paprika powder, black pepper powder, salt and olive oil. Mix and set in side of the dish. Add sliced onion rings in center and set it aside.

Chicken 1 kg
Yogurt 3 to 4 tbsp
Chili flakes 1 tsp or to taste
Paprika powder 1 tsp
Black pepper powder 1 tsp or to taste
Garlic powder 1 tsp
Cumin powder 1 tsp
Oregano 1 tsp
Salt 1 tsp or to taste
Tomato paste 2 tbsp
Honey 1 tbsp
Olive oil 3 tbsp

Marinate chicken with all above ingredients for atleast an hour or overnight.
Thread chicken into skewers and place in baking dish.
Add cherry tomatoes and jalapeños.
Cover with baking paper.
Bake in preheated oven for 35 to 40 minutes
Remove baking paper halfway through baking. Also if required you can remove the dish from oven and discard excess liquid that has collected.
Bake until golden and fully cooked.
Broil for last 3 to 5 minutes for char.
You can also make shawarma with these skewers and veggies.

Shinwari beef keema

Beef mince 1 kg
Oil 1/2 cup or accordingly
Salt 1 tsp or to taste
Ginger garlic paste 3 to 4 tbsp
Green chili 6 to 8
Tomato 6 medium
Red chili whole 8 to 10
Black pepper powder 1 tsp or to taste
Yogurt 1 cup
Ginger julienne, coriander leaves and green chilies for garnish

Heat oil then add mince and salt, cook until changes color
Add ginger garlic paste and cook for a minute
Add green chili and tomatoes( cut into half)
Cover and cook until tomato peel becomes soft
Remove tomato peel and crush tomatoes with spoon
Add whole red chilies
Cover and cook until mince is cooked (you can add water at this point if required).
Once cooked add yogurt and cook on high heat until oil separates.
Add black pepper powder and salt if needed.
Garnish with green chili, ginger julienne, coriander leaves
Enjoy with hot tandoori naan

Mutton Yakhni Pulao

Mutton 1 kg
Onion 1 medium
Ginger julienne 1 inch piece
Garlic 1 whole
Black pepper whole 10 to 12
Cloves 6 to 7
Green cardamom 4 to 5
Black cardamom 2
Cinnamon stick 2
Star anise 1
Coriander seeds 1 tbsp
Cumin seeds 1 tsp
Fennel seeds 1 tsp
Bay leaf 2
Red chili whole 3 to 4
Salt 1 tbsp
Water 6 cups or accordingly

In pot add meat along with all above ingredients. Let it boil then cover and cook on medium heat until meat is 80 percent cooked.
Strain meat and reserve stock for later use.

Ghee/Oil Half cup or accordingly
Bay leaf 2
Black pepper whole 6 to 8
Cardamom 3 to 4
Cinnamon stick 1 small piece
Onion 3 medium
Ginger garlic paste 2 tbsp
Green chilies 5 to 6 (crushed)
Black pepper powder 1/2 to 1 tsp or to taste
Salt 1 tsp
Tomato 1
Yogurt 3/4 cup
Basmati Rice 750 gm
Salt accordingly after adding rice.

Heat ghee then add cardamom, cinnamon, black pepper whole and bay leaf. Let it crackle then add sliced onions and sauté until golden.
Add ginger garlic paste and fry for few minutes.
Add cooked meat and squeeze out garlic(the garlic which is cooked in yakhni) fry for few minutes.
Add crushed green chilies, salt, black pepper powder, tomato and yogurt. Cook on medium heat until oil separates. Cover at this point if needed.
Now add washed and soaked rice along with the yakhni(meat stock)
Adjust salt and add water if needed.
Cover and cook until moisture dries.
Now add fried onions and put on dum for 15 to 20 minutes.
Rest for 5 to 10 minutes before serving.
Enjoy with raita and salad.

Shami Kebab

For spice mix:
Coriander seeds 1 tbsp
Cumin seeds 2 tsp
Cardamom 2
Green cardamom 2 to 3
Black pepper whole 1 tsp
Cloves 4 to 5
Cinnamon 2 small pieces
Whole red chili 12 to 15
Turmeric powder 1/2 tsp
Salt 1 and 1/2 tsp or to taste
Grind all above ingredients.

Meat 1 kg
Chana daal 500 gm
Crushed ginger 2 tbsp
Water 3 to 4 cups or accordingly
In pan add meat, daal, crushed ginger and spice mix along with water and mix.
Cook until tender.
Once cooked mash it well.
Cool it completely.

Onion 2 medium
Green chilies 8 to 10 or accordingly
Coriander leaves handful
Mint leaves handful
Egg 1

Add chopped onion, chopped green chilies, chopped coriander and chopped mint leaves.
Add an egg and mix well until combined.
Make patties and freeze for later use.
Shallow fry until beautifully golden brown.
