Things that I cook for my Susral Dawat:
1) Beef Biryani
2) Dhuan Dahi Gosht
3) Kachy keemy k kabab
4) Sheer Khorma
🟢Dhuan Dahi Gosht Recipe:
Ingredients:
1 kg mutton (with bones)
3 medium onions (made into paste)
1/2 cup oil
1 tbsp ginger-garlic (GG) paste
Spices:
1 tsp red chili powder
1 tsp Kashmiri red chili powder
2 tsp coriander (dhaniya) powder
1 tsp garam masala powder
1/2 tsp turmeric powder
Salt to taste
For Layering:
1 cup yogurt (well whisked)
Fresh mint leaves
Fresh coriander leaves
1 inch ginger (julienned)
1 onion (sliced into rings)
2–3 green chilies
For Dhuan (Smoke):
1 piece of coal
1 tsp oil or ghee
Method:
Heat oil in a pot and add the onion paste. Cook on medium heat until it changes color and turns slightly golden.
Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
Add mutton and cook for a few minutes until it changes color.
Add all the spices: red chili powder, Kashmiri chili, coriander powder, garam masala, turmeric, and salt. Mix well.
Add 2 cups water and cover and cook on low to medium heat until the mutton becomes tender.
Once cooked, increase the heat and bhoonify until the oil separates nicely.
Lower the heat and gently spread a layer of whisked yogurt on top. Do not mix it, just let it sit as a layer.
Add mint leaves, coriander leaves, ginger, onion rings, and green chilies on top.
For the dhuan (smoke):
Heat a piece of coal until red hot
Place it in a small bowl inside the pot
Pour a little oil or ghee over it and immediately cover the pot
Let it smoke for 5–10 minutes
Remove the coal, give a light mix if needed, and serve hot with naan.
Tip:
For best flavor, let it rest for 10–15 minutes after smoking before serving.
