I’ve partnered with for a once in a lifetime trip to the beautiful and badly misunderstood country of Afghanistan. Explore the beauty this country has to offer while also bearing witness to the real situation of Afghans living in Afghanistan. I’ll be co-hosting this so we will be spending a lot of time eating and learning about the food culture of my home country.

October is pomegranate season in Afghanistan and the weather is perfect in every region of the country.

When: September 26-October 10, 2026
Cost: 2500.00 USD all inclusive (meals, transport and hotels WITHIN Afghanistan) flights into and out of the country and visa fees are not included

As I get older I think more and more about how it must have been for my parents who had always dreamed of a life in Afghanistan, a house in Kabul and kids who ran barefoot in the gardens of their own fathers. I can’t look at photos of them when they’d first come to America so much hope and happiness of a future that was never to be. But they made it work. My father a surgeon and my mother everything under the sun. They raised three kids who all love where they are from. I don’t know. Age has mellowed me and made me much sadder but also much more aware of how powerful joy is.

Cardamom Rose Shortbread cookies with saffron glaze

Cookies:
1 cup butter (room temp)
3/4 cup powdered sugar
2 cups flour
1 -2 tsp rose water
2 tsp cardamom powder
1/2 tsp salt
1/2 cups crushed dried rose petals
Cream butter until it is very soft. Add powdered sugar and cream about 5 min. Add flour, rose water, cardamom and salt. Mix another 2 minutes. Add rose petals and combine very well. Gather dough into a ball, cover with plastic and refrigerate for at least an hour. Preheat oven to 325. Take cookies out of fridge, roll out to about 1/4” and cut out circles. Place on cookie sheet and bake about 20-25 min until light golden brown. Let cool completely and make glaze
Glaze:
4-6 saffron threads
2 tbs milk
1 cup powdered sugar
Steep saffron threads in 2 tbs warm water for 20 min. Add 1 cup powdered sugar and stir.
Spoon on top of cookies then top with chopped pistachios.

I also used a ma’amoul mold lined with corn starch. It takes on a completely different texture and color.
