🔥🍳 MENEMEN (TURKISH EGGS WITH TOMATOES)
🧾 INGREDIENTS
BASE:
1️⃣ 🍅 Tomatoes — 4 large
2️⃣ 🫑 Green peppers — 4 pcs
3️⃣ 🌶️ Red (kapya) pepper — 1 pc
4️⃣ 🧅 Onion — 1 small
5️⃣ 🥚 Eggs — 3 pcs
6️⃣ 🫒 Olive oil — 4 tbsp
7️⃣ 🧈 Butter — 1 tbsp
8️⃣ 🧂 Salt — to taste
OPTIONAL:
1️⃣ 🧀 Kashar cheese — to taste
👨🍳 METHOD
1️⃣ Heat olive oil in a pan, add finely chopped onion and sauté lightly (do not brown, just soften).
2️⃣ Add chopped green peppers and red pepper, cook until softened.
3️⃣ Add peeled and diced tomatoes, season with salt, and cook while stirring occasionally.
4️⃣ Cook until tomatoes break down (cooking time depends on ripeness, about 15 minutes).
5️⃣ Lightly mash the tomatoes with a fork for better texture.
6️⃣ Crack eggs into the mixture and cook to your preferred consistency (do not overcook for a soft texture).
7️⃣ Add butter at the end for richness.
8️⃣ Optionally sprinkle cheese on top, cover, and cook for 1 more minute until melted.
