The Cantabria Series Drop - TODAY | 5:00 PM (CET)

At 5:00 PM (CET) today, the entire Cantabria Series goes live. It’s the direct result of pushing the boundaries of diffusion bonding and precise thermal cycling.

At the core of every piece lies , a pure, low-alloy steel engineered for an exceptionally fine carbide volume and high matrix toughness. The outer layers feature a diffusion-bonded Damascus of copper and pure nickel, creating a visual contrast inspired by the Cantabrian coastline.

For our fellow knifemakers we have made the exact same steel as used in this series available on our website.

At the core of the Chef knife lies . By precisely controlling the thermal cycling process, we optimize the austenite grain size prior to the final quench. This highly refined microstructure guarantees that the apex of the edge exhibits exceptional retention and wear resistance during demanding kitchen prep.

For the cladding, a distinct Damascus blend of copper and pure nickel was inspired by the Cantabrian shoreline.

Small knives are often underrated - these versatile little tools benefit as much from a thin and hard edge as any gyuto. They are often used for pushcuts which benefit the most from a fine edge. That's why the core of the Cantabria Petty is made from , providing an very-fine matrix capable of supporting a highly acute edge geometry. This translates directly into unparalleled edge stability for delicate off-board tasks and high-precision cuts.

The handles of this series are made from stabilized, ebonized masur oak which was textured for a slightly rustic contrast to the shiny metal elements.

In collaboration with Gerhard Dragschitz of Motion Cooking, we designed this knife. It represents the close connection between the joy of cooking and the craft of bladesmithing.

The shape of the blade and handle is a slightly refined version of a knife Gerhard forged himself in our workshop some time ago and has been using regularly ever since. Each knife is hand-forged from carbon steel, hardened to 63 HRC, and finished with a C-grind that enhances food release and provides a light, precise cutting feel. The geometry combines performance and control, allowing ingredients to glide cleanly off the blade while reducing friction during cutting.​

The handles are made from ebonized Austrian walnut, carefully shaped for balanced handling and a natural connection between hand and steel.

This is a small, handmade series. Minor variations in dimensions and surface finish are part of the making process and give each knife its individual character.
