Who says leftovers can’t be gourmet? Our bread dumplings – French toast style – pair perfectly with lemon-thyme gel, candied lemon and blueberry sorbet. 🍋

♻️ A delicious way to celebrate reuse food and cut down on waste.

Ingredients:
250 g stale white bread (e.g. brioche)
150 ml milk
1 whole egg
1 egg yolk
20 g butter
1 pinch of salt
Zest of ½ organic lemon

For frying
2 eggs
100 ml milk
20 g sugar
Butter for frying

For the lemon-thyme gel
200 ml lemon juice
60 g sugar
4–5 sprigs of thyme
3 g agar agar

For the candied lemon
1 organic lemon
150 g sugar
150 ml water

For the Blueberry sorbet
500 g blueberry purée
100 g sugar
15 g glucose
1.5 g gelatine (sheet)
Juice of ½ lemon (warmed, strained)
