🔪 Nigara Aogami (Blue) Super Matt Migaki Tsuchime Series
Handcrafted by Nigara Hamono in Hirosaki, Aomori, this series features a Super Blue carbon steel core, known for its excellent edge retention, sharpness and ease of sharpening. Each blade combines a refined Matt Migaki finish with Nigara’s distinctive Tsuchime (hammered) texture, creating a subtle yet highly tactile appearance. The hammered surface also helps improve food release during cutting. The stainless steel cladding makes the knives easier to maintain than fully carbon-clad blades, while the exposed Aogami Super edge still requires proper drying and care after use.

🌊 Nigara Anmon Raindrop Damascus Series: A true statement of Tsugaru craftsmanship, the Nigara Anmon Series combines premium SG2 powdered steel with one of the most distinctive Damascus patterns from Nigara Hamono.

Each blade features 25 layers of forged Damascus on each side, finished with a finely polished and etched surface that creates the Anmon’s dramatic, high-contrast raindrop pattern.

The design takes inspiration from the rippling water of the Anmon Waterfalls, located in the Shirakami Mountains near Hirosaki. The flowing pattern is an original technique of Nigara Forging, giving each blade its own character and depth.

Designed for modern high-hardness steels, the Xin Guo Diamond/Ceramic Hybrid Stone is built to handle steels such as SG2/R2, HAP40, ZDP-189, SRS13 and MagnaCut, including steels above HRC 63.

Its high concentration of industrial diamonds is combined with a cement and resin hybrid bond, delivering fast and consistent material removal while maintaining good feedback and control.

The stone is designed to perform particularly well on high-alloy steels containing tungsten, vanadium and cobalt, where conventional aluminium oxide stones can be slower.

🔥 Hatsukokoro Hinotori V-Toku 2 Rainbow Damascus Gyuto 210mm 🔥 The Hinotori (火の鳥) meaning Firebird / Phoenix, features a spectacular multi-metal Damascus cladding made with copper, brass, nickel and stainless steel. After sandblasting and etching, the warm copper and brass tones create a vivid, organic pattern that shifts beautifully with the light.

At the core is Takefu V-Toku 2, a low-alloy carbon steel hardened to approximately 62–64 HRC, offering excellent edge retention, a fine edge and the characteristic bite of carbon steel. The cladding is relatively low maintenance, but the exposed V-Toku 2 edge is reactive, keep it clean and dry after use.

Forged by Yoshikane in Sanjo, Niigata, Japan, this 150mm Petty combines SKD semi-stainless steel, a refined Nashiji finish, and Yoshikane‘s signature tapered geometry.
What makes this knife special is the kireaji, the “cutting feel.” The convex grind helps split food and reduce sticking, while SKD takes an extremely fine, sharp and toothy edge. The result? Effortless cutting, excellent food release, and a remarkably nimble feel in hand.
