Some friendships are simply meant to be.

20 years of shared history. Desert drives from LA to Vegas. Late nights, big laughs, and more long conversations than we could ever count.

What began as a friendship has naturally grown into something even more special — a true partnership. From a conversation over lunch, to a cheeky peck on the cheek 3 years ago, and now the moment I get to officially welcome the ultra-talented (and my dear friend) Monty Koludrovic to the Victor Churchill family.

I couldn’t be more excited for what lies ahead as we step into this next chapter together. The future is bright, the energy is high, and this is only the beginning.

Let the fun begin 🙏👊🏼❤️

It’s never been about the Awards and Accolades but always about shining an important and much needed spot light on and championing owner/operator retail butcher shops.

Nonetheless it’s always truly humbling when our small family business is recognized and rewarded for our insatiable appetite, courage and vision to continue to innovate and think outside the square in respect to the service and experience we ultimately strive to provide our loyal and incredible customers.

I am incredibly proud to share that our new Vic’s Chatswood retail store has been recently recognised at the 2025 Australian Interior Design Awards as the best designed retail store in Australia.

Thank you to the supremely talented group of people who worked tirelessly on this project, trusted and perfectly interpreted my vision for what I believe reflects the future of meat retailing.

At its heart our new Vic’s retail stores located in Chatswood and Bondi Junction in Sydney and Chadstone in Melbourne is all about placing the the craft and butchering process on full display — encouraging interaction, trust, and storytelling 🙏🏼❤️👊🏼

To our valued customers and supporters,

It is with a heavy heart and deep sadness that I share the news that my family and I have made the incredibly difficult decision not to continue operating our Vic’s retail store at the Sydney Fish Market.

This also means we will not be moving forward with our exciting and innovative new retail concept planned as part of the Sydney Fish Market redevelopment.

As a result, our 11-year relationship with the Sydney Fish Market Authority comes to an end, effective immediately. Our store at the current Pyrmont location will close permanently as of this morning, Thursday, 17 April 2025.

As I write this, I reflect on our time at the Sydney Fish Market with immense gratitude and fond memories. It has been a long and rewarding journey for my family and the entire Vic’s team.

Unfortunately, in recent weeks, an irreparable breakdown in our relationship with the Management and Board of the Sydney Fish Market—due to circumstances completely beyond my control—means it is no longer commercially or financially viable for us to continue at our current location or proceed with our future plans.

I want to extend my deepest thanks to all our incredible staff, past and present, for your hard work, passion, and dedication over the years. I am equally grateful to our loyal customers for your unwavering support, your patronage, and the countless good times and memories we’ve shared over the past 11 years. We could never have achieved what we did without you.

While we are saddened to say goodbye to Pyrmont, we look forward to continuing to welcome you to our Vic’s stores in Chatswood and Bondi Junction, our Saturday Mascot Factory Outlet, and of course, through our Vic’s Online home delivery service.

Thank you once again for your support. Though today is bittersweet, we’re excited about the new opportunities ahead in the months and years to come.
