Orange Butter Cookies
Ingredients
- 200 g unsalted butter, softened
- 90 g powdered sugar
- 1½ tbsp finely grated orange zest
- 1 tbsp fresh orange juice
- 1 tsp vanilla extract
- 220 g all-purpose flour
- 30 g cornstarch
- ¼ tsp salt
- 1–2 tbsp milk, only if needed
Method
1. Prepare: Preheat the oven to 170°C / 340°F. Line two baking sheets with parchment paper.
2. Cream: Beat the softened butter and powdered sugar for 3–4 minutes, until pale, light, and fluffy. Add the orange zest, orange juice, and vanilla and beat until incorporated.
3. Make the dough: Sift together the flour, cornstarch, and salt. Gradually fold into the butter mixture until a soft dough forms. If it's too firm to pipe, add milk 1 teaspoon at a time.
4. Shape: Transfer the dough to a sturdy piping bag fitted with a large open-star tip. Pipe rosettes or swirls onto the prepared baking sheets, leaving space between each cookie.
5. Chill and bake: Refrigerate the shaped cookies for 20–30 minutes so they retain their ridges. Bake for 12–15 minutes, until the centers are pale golden and the edges are lightly browned.
6. Cool and serve: Leave the cookies on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
For stronger orange flavor: Rub the fresh orange zest into the powdered sugar with your fingertips before creaming it with the butter. This releases the citrus oils and gives the cookies a more pronounced natural orange aroma.
