Moroccan beef with cous cous 🇲🇦

I’m trying to cook as much from my pantry/freezer as possible instead of buying extra things just for one recipe - so I subbed as follows:

🥩 No lamb ➡️ used beef
🍑No dried apricots ➡️ used sultanas
🥜No slivered almonds ➡️ used tamari almonds
🌿No fresh coriander ➡️ used ground coriander & spinach

Cooking with Thermomix® is (almost) as good as travelling around the world 🌏 and just as tasty!

Creamy and delicious, this will be in the brekky menu more as the weather cools down.

When my kids were little this was on high rotation; hands-free cooking meant I couldn’t burn the oats in the pan when I was wrangling the little ones and multi-tasking in the mornings 😂

Meatballs in tomato sauce with pearl couscous and salad 🥗I love mincing my own meat so I can add in extras while it minces - herbs, spices, onion and garlic - for extra flavour and saving time.

Of course I also add extra veggies to the tomato - you can blitz these first if you need to hide them 🤫they’ll never know!

Top tip - chicken meatballs are great too 👏🏻

I tried out the coconut fish and sweet potato soup - OH MY YUM! 🍠🐠
I had Thai red chilli paste in the fridge from a batch I made a while ago but wanted a little change from the standard curry. I can see this being a regular addition to the menu through winter. Adjust the heat to suit your family - ours was definitely in the hot 🌶️ side - just the way I like it.
