OctopusπŸ™ Char Siu with Pickled Daikon & Sesame Crisp

Ingredients (Serves 4)

Octopus Char Siu:

600g octopus tentacles, cleaned

2 tablespoons neutral oil (grapeseed or vegetable)

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon honey

1 teaspoon Chinese five-spice powder

2 garlic cloves, minced

1 teaspoon grated fresh ginger

Pickled Daikon:

200g daikon radish, peeled and thinly sliced or julienned

100 ml rice vinegar

50 ml water

1 tablespoon sugar

Β½ teaspoon salt

Sesame Crisp:

2 tablespoons white or black sesame seeds

1 teaspoon honey (optional, for binding)

A few drops of neutral oil (optional)

Directions:

Marinate and Cook the OctopusπŸ™πŸ”₯:

Mix soy sauce, hoisin, honey, five-spice, garlic, and ginger in a bowl.

Coat the Octopus in the marinade and let rest for at least 1 hour (or overnight in the refrigerator for deeper flavour).

Heat a grill or Hot Pan over medium-high heat and brush lightly with oil.

Remove the Octopus from the marinade (reserve liquid). Grill or sear the tentacles, turning occasionally and brushing with reserved marinade, until caramelized and lightly charred, about 4–5 minutes.

Pickle the Daikon:

Combine rice vinegar, water, sugar, and salt in a small saucepan. Heat until sugar dissolves.

Place daikon in a heatproof bowl and pour the hot liquid over it.

Let cool to room temperature, then refrigerate for at least 20 minutes.

Prepare the Sesame Crisp:

Toast sesame seeds in a dry non-stick pan over low heat until fragrant.

Mix with honey and a few drops of oil if desired for binding.

Spread thinly on baking paper, press flat, and allow to cool until crisp. Break into shards.

Assemble and Serve:

Arrange the octopus tentacles in the center of each plate.

Place some pickled daikon alongside.

Garnish with shards of sesame crisp for texture.

Serve immediately.

Cooking Time: 15 minutes
Total Time: 35 minutes active (plus marinating)

Crunchy Panko Fish Sticks with Tartar Style White Sauce 🐟


Ingredients:

For the Fish🐟 Sticks:

500g white fish fillets (such as cod, Flathead , or Snapper ), cut into 1-inch strips
1 cup panko bread crumbs
1/4 cup all-purpose flour
1 egg, beaten
1 tablespoon milk
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Tartar Style White Sauce:

1/2 cup mayonnaise
1/4 cup chopped dill pickles
1 tablespoon chopped fresh dill
1 clove garlic, minced
1 tablespoon lemon juice
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions:

Prepare the Fish: Cut the fish fillets into 1-inch strips.
Make the Breading: In a shallow dish, combine panko bread crumbs, flour, garlic powder, onion powder, salt, and pepper.
Bread the Fish: Dip each fish strip into the beaten egg mixture, then coat thoroughly in the breadcrumb mixture.
Fry the Fish Sticks: Heat about 1 inch of vegetable oil in a large pan over medium heat. Carefully add the breaded fish sticks and fry for 2-3 minutes per side, or until golden brown and cooked through.
Make the Tartar Style White Sauce: In a small bowl, whisk together mayonnaise, chopped dill pickles, chopped fresh dill, garlic, lemon juice, salt, and pepper.
Serve: Drain the fish sticks on paper towels and serve immediately with the Tartar Style White Sauce.
Tips:

You can use any type of white fish you like for this recipe.
For a spicier sauce, add a pinch of red pepper flakes to the Tartar Style White Sauce.
Serve the fish sticks with your favourite side dishes, such as french fries, coleslaw, or tartar sauce.
