I've had a few people ask me for my cookie recipe so here it is 🥰…
VANILLA SUGAR COOKIES
My recipe below is based on https://bakingamoment.com/cutout-cookies-neat-edges/. I can’t remember why I changed the recipe to use 3C flour and ¾C cornflour (instead of 3.5C and ½C as in the original recipe) 🤷🏻♀️
Ingredients are for a double batch so just halve the quantities if you want to make a single batch. A single batch makes approx 35 x 7cm circle cookies.
450g/2C caster sugar
500g butter at room temperature (or if straight out of the fridge microwave on P3 for 1 minute, check to see if it needs more)
4 eggs - 200g at room temperature
2t vanilla extract
2t vanilla bean paste
860g/6C plain flour
290g/1 ½C cornflour
Sift the plain flour and cornstarch into a bowl. Set aside.
Put the sugar in the bowl of the stand mixer. Chop the butter into smaller pieces and add to the bowl.
Cream the butter and sugar just until smooth and combined. Scrape down the bowl making sure all the butter gets mixed in
Stop the mixer and add the eggs. Mix until incorporated. The mixture may look curdled/lumpy but it’s fine.
Stop the mixer and add the vanilla essence and (shake the bottle first!) paste. Mix in quickly.
Add the sifted flour/cornflour mixture in 2 batches (⅔ first, then the remaining ⅓) and mix until completely combined. Scrape down the bowl between each batch of the flour mixture.
Process only until the mixture gathers into a ball and pulls away from the sides of the bowl
Empty the dough onto baking paper/silicon mat. Divide the dough in quarters if you're making a double batch. If you’re making a single batch just divide the dough in half.
Roll each portion on baking paper/silicon mats to ¼ inch (6mm) thickness
If baking straight away, put the rolled out dough in the fridge for at least 15 mins before cutting out the shapes.
Place the cut out cookies on trays lined with a silicone mesh mat or baking paper.
The cookies don’t spread much so they can be put quite close together on the tray - but not touching. Put any smaller cookies in the middle of the tray (the outer ones will cook faster).
BAKING TEMPERATURES, TIMES
Set oven to 165 degrees, fan assist bake option. Once it’s reached temperature, leave it for 20 minutes to preheat.
Baking times -
Bake the cookies until the edges are JUST starting to brown
¼ inch (6mm) thick - around 12 minutes
Smooth air pockets - to flatten any air pockets, smooth over the warm, baked cookies with a fondant smoother when they are fresh out of the oven.
