So simple yet so tasty 🌮

Crispy Pork Tacos with Creamy Lime Sauce

WHAT YOU’LL NEED
Pork Tacos:
500g SunPork Pork Mince
1 Tbsp. oil, plus extra for frying
½ brown onion, finely diced
2 Tbsp. tomato paste
2 Tbsp. taco seasoning
Water or chicken stock, as required
Salt, to taste
8 small flour tortillas
2–3 cups grated mozzarella
Fresh coriander, to serve (optional)

Creamy Coriander Lime Sauce:
1 bunch fresh coriander, finely chopped
2 jalapeños, deseeded and finely diced
4 garlic cloves, minced
½ cup mayonnaise
½ cup sour cream
1 lime, juiced
2 Tbsp. grated Parmesan
Salt and black pepper, to taste

HOW TO MAKE IT
Start by making the sauce first. In a bowl, combine all the ingredients for the creamy coriander lime sauce together. Season with salt and pepper, then stir until well combined and creamy. Refrigerate until ready to serve.

Heat 1 Tbsp. oil in a large frying pan over med. heat. Add the onion and cook for 2–3 mins until softened. Add the pork mince, breaking it apart with a wooden spoon, and cook for 5–7 mins until browned.

Stir through the tomato paste and taco seasoning. Add a splash of water or chicken stock if needed. Cook for another 3–4 mins, or until the pork mince is cooked through and the mixture has thickened. Season to taste and set aside to cool slightly.

Sprinkle mozzarella over one half of a tortilla, add a portion of the pork, then top with more cheese. Fold the tortilla in half and press gently to secure the filling. Repeat with the remaining tortillas.

Heat 3–4 Tbsp. oil in a large frying pan over med heat. Fry the tacos in batches for about 1–2 mins on each side or until golden and crispy. Transfer to a wire rack while cooking the remaining tacos, adding more oil as needed.

Serve with the creamy coriander lime sauce for dipping or drizzling. Finish with extra fresh coriander and a squeeze of lime, if desired.

Pork Bolognese Loaded Garlic Bread

WHAT YOU’LL NEED
Pork Bolognese:
500g SunPork Pork Mince
1 Tbsp. olive oil
1 brown onion, finely diced
1 carrot, finely diced
2 garlic cloves, crushed
1 Tbsp. tomato paste
400g tin crushed tomatoes
½ cup beef or chicken stock
1 tsp. dried oregano
½ tsp. dried basil
1 tsp. Worcestershire sauce
Salt and cracked black pepper, to taste

Garlic Bread:
80g butter, softened
3 garlic cloves, crushed
2 Tbsp. fresh parsley, chopped
1 large crusty baguette or Turkish loaf, halved
Pinch of salt

Cheesy Topping:
1 cup grated mozzarella
½ cup grated Parmesan
Fresh basil or parsley, to finish
Extra cracked black pepper

HOW TO MAKE IT
Heat the olive oil in a large frying pan over med-high heat. Add the pork mince and cook for 4-5 mins, breaking it up with a wooden spoon until browned.

Add the onion and carrot and cook for 4-5 mins until softened. Add the garlic and tomato paste and cook for another 1 min, stirring until fragrant.

Stir through the crushed tomatoes, stock, oregano, basil and Worcestershire sauce. Season with salt and cracked black pepper. Reduce the heat and simmer for 15-20 mins, stirring occasionally, until thick and rich.

Preheat the oven to 200°C fan-forced.

In a small bowl, mix the softened butter, garlic, parsley and salt until well combined.

Generously spread the garlic butter on to the bread. Spoon the pork bolognese over the bread, spreading it right to the edges.

Sprinkle generously with mozzarella and Parmesan, making sure the Bolognese is well covered.

Place the loaded garlic bread onto a lined baking tray and bake for 10–12 mins, or until the cheese is melted and bubbling. For extra golden edges, switch the oven to grill for the final 1–2 mins, watching closely.

Finish with fresh basil or parsley and plenty of cracked black pepper. Slice into chunky pieces and serve hot.

Everything good about a big breakfast, stacked into a brioche bun and dropped into a pool of hollandaise. 🤤

Breakfast Dipper Burger

WHAT YOU’LL NEED
Sausage Patties:
500g SunPork pork mince
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. smoked paprika
1 tsp. dried sage
1 Tbsp. brown sugar
1 Tbsp. Worcestershire sauce
4 slices cheddar cheese
Whipped Dijon Butter
50g butter, softened
1 Tbsp. Dijon mustard

Burgers:
8 SunPork bacon rashers, cooked
4 brioche burger buns, lightly toasted
4 hash browns, cooked
4 eggs, cooked
Rocket leaves
Chives, finely chopped, to serve
Hollandaise
Salt & pepper, to season

HOW TO MAKE IT
In a large bowl, add pork mince, garlic powder, onion powder, smoked paprika, sage, thyme, brown sugar, Worcestershire sauce, season with salt and pepper, then mix until just combined.

Divide mince into four equal portions and shape into burger patties slightly larger than your buns, as they’ll shrink while cooking.

Heat a lightly oiled frying pan over medium heat and cook for 4–5 minutes per side until golden, and cooked through. Place a slice of cheddar on each patty during the final minute of cooking and allow it to melt.

In a small bowl, beat together the softened butter, Dijon mustard, salt and cracked black pepper until smooth and fluffy.

Spread the Whipped Dijon Butter over both toasted buns.

Layer the bottom bun with rocket, hash brown, bacon, patty, fried egg and finish with the top bun.

Spread a generous layer of hollandaise on the serving plate before slicing each burger in half, then place on the serving plate cut side down.

Garnish with chopped chives and a generous crack of black pepper over the hollandaise, if desired.

Serve immediately while hot.

Hot Honey Loaded Crisps 🌶🍯

WHAT YOU'LL NEED
500g SunPork Pork Mince
200g feta
100g cream cheese
2 Tbsp. Greek yoghurt
1 Tbsp. lemon juice
1 Tbsp. olive oil
1 tsp. smoked paprika
1 tsp. garlic powder
½ tsp. onion powder
½ tsp. salt
1 Tbsp. soy sauce
1 Tbsp. honey
1 tsp. crispy chilli oil
Potato chips
Hot honey, to drizzle
Chives, to garnish

HOW TO MAKE IT
Place the feta, cream cheese, Greek yoghurt and lemon juice into a food processor. Blend until smooth and creamy. Transfer to a bowl and refrigerate until ready to use.

Heat the olive oil in a large frying pan over med-high heat.

Add the pork mince and spread it evenly across the pan. Allow it to cook undisturbed for 3–4 mins to get crispy. Break the mince up and add the smoked paprika, garlic powder, onion powder and salt.

Continue cooking for 5–7 mins, stirring occasionally, until the mince is golden brown and crispy around the edges.

Add the soy sauce, honey and crispy chilli oil. Cook for a further 1–2 mins, stirring until the pork is sticky, and caramelised. Remove from the heat.

Spread the potato crisps onto a large serving platter. Dollop over the whipped feta and spoon over the pork mince. Drizzle generously with the hot honey.

To finish, garnish with chives.
