Best bakeware around in our opinion. We have started with the basics and will expand the range over the balance of the calendar year.

Autumn is the perfect time to cook and eat pizza outdoors. The most delicious and simplest pizza to make is the Margherita — hailing from Naples!

Start with a good tomato sauce made with Mutti San Marzano tomatoes check out Searching for Italy, Season 1, Episode 1 on if you want to find out why you should use these tomatoes. Top with Buffalo Mozzarella — more taste than regular mozzarella and absolutely scrummy! Add basil when out of the oven and Voila!

NEW PRODUCT ALERT — has arrived at Phillip & Lea

Bruny Island Cheese Co. was established in 2003 by Nick Haddow, who trained at some of the great cheesemaking regions in Europe, the UK and the US. Taking inspiration from his training and travels, he has created cheeses with a distinctly Tasmanian feel. These cheeses are connected to the environment in which they are produced with subtle variations depending on the seasons.

The company sources milk from its own small-scale dairy farm where heritage breeds of cows associated with some of the world’s great cheesemaking regions are run. The farm has sustainable biodynamic practices and animal welfare at its heart.

We are proud to be stocking the Saint and 1792 soft cheeses, with semi-hard cheeses arriving soon.

The Saint is a complex, richly flavoured soft cheese reflective of the seasonal changes on the farm. It can be eaten young, when firm and the flavour delicate or mature, when the inside is soft and deliciously squishy!

The 1792 is one of Bruny’s signature cheeses. Named after the year the French landed in Tasmania, it is a pungent washed rind aged on a slip of Huon pine, which imparts a strong smoky character. Enjoy it with cider, beer or a glass of Pinot!

It’s almost the weekend, the weather is warming up and it’s time to take it easy! Why not relax with a Tatsumi gin. Small batch made with only one botanical — Macedonian juniper berry — it is pleasantly spicy, with a complex rich after taste. Perfect on ice, with soda or in a Martini!

Although Japan is known for its sakes, they also take the art of whisky making very seriously. At Phillip & Lea, we have 4 whiskies available all by White Oak.

Akashi Bourbon is a 5-year aged, limited release. It is a Japanese take on an American classic. Delicate peat notes with hints of vanilla, spices and dried fruit.

Akashi Single Malt Whisky is made up of 4, 5 and 7-year malt aged in different cask finishes. It has a lovely delicate bouquet, typical of refined Japanese whiskies.

The 2 Eigashima whiskies were released in 2020 to celebrate the 101-year anniversary of White Oak receiving their licence to distil whisky. The Blended Whisky is a blend of malt whiskies (100% UK malt) and grain whiskies and finished in sherry casks. The Single Malt is made from 100% UK malt and aged in sherry casks.

Let’s talk Japanese rice!

If there is one type of rice that exemplifies Japanese food culture, it is Koshihikari. In western culture, it is often thought of as sushi rice. The grains are short and plump with a high starch content which allows them to stick together — perfect for picking up with chopsticks! Koshihikari sits in the category of super premium short-grain rice because of its aroma and consistency.

When cooking this rice, you can use a rice cooker, a saucepan on the cooktop or you can use the more traditional method of cooking in a clay pot called a Donabe (doh-NAH-bay). As well as cooking rice you can cook a hot pot, soup or stew. It is designed for everyday use.

The Donabe pictured is a Kamado-san: a double-lidded pot that gives the effect of pressure cooking and helps prevent the contents from boiling over. The thick body of the pot has great heat retention and continues to steam the rice once the heat is turned off, resulting in fluffy, shiny rice!

In Australia, canned fish is seen as a cheap alternative to the fresh product. However, for the people of Spain and Portugal, shops are practically swimming in canned seafood. Canning is often the preferred method of preserving the catch of the day: a tinned time capsule of flavour and nutrients. They are thought of so highly that they appear on restaurant menus and some bars serve nothing but preserved gourmet seafood.

While preserved with traditional methods, it is the liquido de cobertura (the liquid added to protect the seafood from drying out) that sets Spanish and Portuguese canned fish apart. The focus is on highlighting flavour and texture. Squid are often preserved in their own ink, clams and mussels in brine to mimic the sea, and dense textured fish like tuna and mackerel in oil, while sardines are seasoned with every permutation of oil, spice and tomato sauce.

Simple uses for canned seafood:
Toss sardines with a legume, fresh tomatoes or peppers and olives. Top with an acid, parsley, a hard-boiled egg and, most importantly, the remaining sardine oil.

Use mackerel as you would tuna. Again, keep the oil for dressings and garnishes.

Drape anchovies over a thin slice of bread and dab with a little marmalade to contrast the salinity. Or top soft-boiled eggs or roasted broccoli with them.

Toss mussels into pasta with garlic, lemon and fresh mint.

Eat clams in salads with lots of good olive oil or toss them into a light pasta at the last minute.
