Sourdough is so good for the gut biome.

This morning I dragged myself out of bed to see winter solstice in, burn out the darkness and welcome in the light.
I burnt a word that has been holding me back and opened my book to quote, it was so fitting as I was sitting and looking over the land my ancestors once farmed and roamed.
The bird song, the cold breeze as I meditated was gentle on my feet on the bare earth.
Then I went for bike ride along the river.
Had the most amazing Sound Healing with Jackalyn.
Roast chicken in the oven.
I'm so grateful for the day, it maybe the shortest day of the year, but I made the most of it.

Personal they are all nice, in salads, on sourdough with goat cheese and Avocado.

These tiny seeds may be small, but they're packed with vitamins, minerals, healthy fats, fiber, and protein. Here's what makes each one unique:

☆Pumpkin Seeds (Pepitas)
Rich in magnesium, zinc, phosphorus, iron, protein, and healthy fats. Pumpkin seeds support immune function, muscle and nerve health, bone health, and normal energy production. They're also a good source of antioxidants that help protect cells from oxidative stress.

Thank you to the lovely group of people that came out to my Good Gut health starts in the kitchen workshop today Zen Within Wellness Centre to learn about gut health, and how to support your immune system.
We made Kraut using the most amazing cabbages & kale from Seven Hills Organic Farm .
Kraut is full of live micro-organisms aiding with the digestion to make good healthy gut biome.
We also made our own Fire Cider 🔥 to help as a preventative for the immune system.
It is full of antibacterial and anti inflammation herbs and spices.
Thanks to Faye Pike I was able to use fresh turmeric from her garden.

Winter is here and with that comes Soup weather. There is nothing more nourishing than a good bowl or mug of home-made soup. Your hands wrapped around it giving you nourishing from the inside to the out.
If you have been to any of my workshops you would have heard me bang on about making a whole chicken stock, killing multiple birds with one stone. Juicy chicken for sandwiches, salads, pasta and rice. Chicken stock full of goodness, for soups, stews and collegen filled broth.

You can put so much into a good soup, pack it full of vegetables, beans and lentils that are good for protein and fibre.
Beans and lentils if soaked overnight become a living microbe, which is fantastic for gut health.
They are also good source of protein and fibre, buying dried is easier to store, less waste, and good on the hip pocket.

Here is my Quick Curried Lentil Soup 🍲 😋
If you have been to any class you will know about basic food prep to make life easier.

1 cup of Red lentils soaked overnight
3 litres of your ready made Chicken Stock
1 onion sliced
3 garlic cloves sliced
1 piece of Ginger grated thumb size
3 carrots grated
2 tablespoon Curry power
2 to 3 leaves Silverbeet or half bag baby spinach
1 cup Roasted Pumpkin.

Cook in pot with a little oil onion, garlic, Ginger and Carrot until soft.
Then add lentils and chicken stock, bring to the boil, simmer for 20 minutes.
Add spinach and Blitz, season with salt and pepper.
Then add Roasted Pumpkin and warm, and coriander.

This is Quick soup packed full of goodness.

I have 1 loaf of Luke's SOURDOUGH to give away, if you haven't had his SOURDOUGH this is the real stuff.
Made with his 16 year old starter.
24 hour Fermentation.
No added preservatives.
Just Flour, water and salt.
It will be baked tomorrow morning and you need to pick up from Bunbury or Bridgetown.
