🥗 SPANISH-STYLE WHITE BEAN, EGG & SPINACH SALAD
Simple • nourishing • budget-friendly

INGREDIENTS

1 large cup cooked white beans
(or 1 large can, drained and rinsed)
5 boiled eggs, chopped
Baby spinach, chopped
1 tomato, chopped
1–2 cloves garlic, crushed
2 tbsp egg mayonnaise
Salt & freshly ground black pepper

METHOD

Place the cooked white beans in a large bowl.
Add the chopped boiled eggs, baby spinach and tomato.
Stir in the crushed garlic and mayonnaise.
Season with salt and freshly ground black pepper.
Gently mix everything together and serve.

M'S TIP 🤍
I use dried white beans because they're much cheaper than canned. Cook a batch and keep them ready in the fridge or freezer for quick meals.

A simple daily ritual 🍋‍🟩.

I'll be honest... I don't drink lime water because I crave it.

I drink it because I'm becoming more intentional about looking after my body. At 60, I believe that what we eat—and drink—matters. While no single food is a miracle, I like knowing I'm giving my body a little extra vitamin C and encouraging myself to drink more water each day.

I usually enjoy it after my morning coffee and before lunch. It's become one of those small daily habits that reminds me to nourish my body, one simple choice at a time.

It's not about turning back the clock. It's about giving my 60-year-old body the care it deserves.

This is one of those simple dishes that reminds me of home. With Spanish chorizo, white beans, potatoes and smoky spices -add enough smoked paprika to get that warm, orange-red colour-, it slowly simmers into a hearty, comforting meal that's full of flavour and made from everyday ingredients.
