The Kondari Hotel

The Kondari Hotel in Hervey Bay has been refreshed through a considered refurbishment that celebrates the relaxed coastal character of the Fraser Coast. Set around a tranquil lakeside setting, the venue has long served as a gathering place for locals and visitors, offering a uniquely casual hospitality environment that reflects the lifestyle of the region.

C+W’s refurbishment responds directly to the regions coastal setting and lifestyle, shaping a hospitality environment that feels open, relaxed and closely connected to the outdoors. The design enhances the venue’s relationship with the lake at the centre of the property, with hospitality spaces oriented to maximise views across the water and create a calm, resort-like atmosphere suited to long lunches, casual drinks and family gatherings.

The beer garden forms a key focal point of the project, where a large-scale mural of a humpback whale celebrates the natural heritage of Hervey Bay and its globally recognised marine visitors. The artwork anchors the outdoor space with a sense of place and storytelling, while reinforcing the relaxed coastal identity of the venue.

Through a carefully considered approach to materiality, layout and connection to the landscape, C+W’s hospitality design brings renewed life to the Kondari Hotel—strengthening its role as a relaxed lakeside destination shaped by the coastal character of the Fraser Coast.

Holland Park Hotel

Set within Brisbane’s evolving southern corridor, the Holland Park Hotel occupies a site intrinsically tied to the suburb’s emergence from rural fringe to tram-linked urban precinct. Constructed in the mid-1920s at the terminus of the Logan Road tramline, the hotel formed part of a new commercial nucleus—an anchor for a rapidly expanding community and a social condenser for travellers and locals alike.

C+W’s refurbishment repositions the venue within this continuum, treating the building not as a static heritage artefact, but as a layered framework for contemporary occupation.

Central to the design approach was an intentional “uncovering” of the building’s accumulated history. Nowhere is this more evident than in the sports bar, where existing structure and successive layers of finish have been selectively revealed. Rather than restoring to a singular moment in time, the intervention embraces the building’s patina—retaining scars, textures and irregularities to construct an atmosphere that is immediate, tactile and unmistakably authentic. In contrast, the bistro and gaming areas adopt a more calibrated refinement, balancing contemporary expectations of comfort and performance with the robust character of the original fabric.

The result is a venue that re-engages with its historical role as a local meeting place, while offering a renewed spatial identity aligned with contemporary hospitality culture. By working with, rather than against, the building’s inherited fabric, the project reinforces the enduring social significance of the Holland Park Hotel—an architecture shaped as much by time and use as by design.

efficiently a venue operates behind the scenes.

At The Brook, we planned the layout around a central bar, kitchen and service point connected directly to back of house and loading areas to streamline operations, improve workplace safety and reduce staffing inefficiencies.

Thoughtful planning at the design stage can have a huge impact on the long term success of a venue.

Pritchard’s Hotel, Mount Pritchard, NSW - Exterior Design

The hero of the facade — a custom red powder-coated mesh screen — wraps the venue in a bold, undulating form that shifts with light, shadow and perspective throughout the day. A contemporary layer of movement and identity, designed to give Pritchard’s Hotel a striking presence both day and night.

A great hospitality venue starts before you even walk through the door.

At the Brook, we designed the entry experience to feel relaxed, welcoming and effortless, with multiple informal entry points that allow patrons to naturally flow from the car park and shopping centre straight into the venue.

No grand arrival moment, just a seamless transition into the experience.

Springfield Tavern, Springfield QLD

Located within one of South East Queensland’s fastest-growing corridors, the Springfield Tavern serves as a key social anchor for a rapidly evolving community. C+W’s refurbishment repositions the venue through a cohesive reworking of the gaming room, sports bar and bistro/function areas—establishing a refreshed identity aligned with its local context.

The design centres on a warm, grounded palette layered with integrated greenery, introducing softness, depth and a more relaxed atmosphere. Planting operates as a spatial device, shaping zones and softening transitions across the venue.

The sports bar draws on the region’s strong sporting culture, through subtle material and tonal references rather than overt theming. In the bistro and function areas, flexibility is prioritised, with layered lighting and varied seating supporting a range of uses from casual dining to larger gatherings.

Measured, contemporary interventions unify the venue, transforming it into a more inviting and locally resonant hospitality environment.

Twice a year, we press pause on project deadlines and make time for what matters most — our people.

Our bi-annual team building day was all about connection, collaboration, and celebrating the incredible team behind everything we do. From interactive challenges at 123 Boom! to some friendly competition on the bowling lanes, it was a day filled with laughs, teamwork, and great memories.

Strong culture builds strong teams — and strong teams design great hospitality venues!
