🇬🇧 Episode 23: Cooking Until I Find a Husband 💍

Red flag recovery curry 🚩➡️💚

Because if he comes back after disappearing for 3 business days with “sorry, been busy,” the only thing you should be entertaining is this spicy chicken curry.

Red capsicum for the red flags, spinach for the green flags we’re trying to manifest, and enough spice to remind you your standards should be higher.

Honestly, healing… but make it dinner 😭

Ingredients
- 4 tbsp of mustard oil
- 5 dried red chillies
- 1 small red onion, sliced
- 5 cloves of garlic, chopped
- 1 tsp of turmeric
- 1 tsp of paprika
- 1 tbsp of hot chilli powder
- 2 tsp of garam masala
- salt, to taste
- 4 chicken thighs, cut into small chunks
- 2 medium sized capsicums, chopped
- 1/2 cup of water
- 1 tbsp of coriander to garnish, finely chopped

Method
1. Heat the mustard oil and sauté the dried chillies, onion and garlic
2. Once the onions start going translucent, add the spices and fry on medium heat for a couple of minutes, until fragrant
3. Add the chicken and fry with the spices some more for 2 minutes
4. Add the capsicum and water
5. Simmer on low for about 20 minutes
6. Garnish with coriander
7. Enjoy!

🇬🇧 Episode 22: Cooking Until I Find a Husband 💍

Is this Crème Caramel à la Husbandless enough to get land me a British husband? It’s soft, creamy, silky with the perfect caramel.

This recipe is also enough for making 2 big Crème Caramels.. so more for me I guess 😂🥺

Ingredients
- 8 cups full cream milk
- 600mL thickened cream
- 2 tsp vanilla extract
- 12 tbsp of sugar (for the crème part)
- 1 cup sugar (for the caramel part)
- 11 eggs

Method
1. Heat the milk, cream, vanilla and sugar until warm and well combined
2. Let the milk cool down for 5-10 minutes
3. Add the sugar to a pan and stir continuously until it turns a nice rich golden brown
4. Pour the caramel evenly into 2 big tins
5. Whisk the eggs and slowly pour in the milk mixture evenly into the tins
6. Bake at 150°C for about an hour
7. Let them cool overnight
8. Flip over
9. Enjoy!

🇬🇧Episode 21: Cooking Until I Find a Husband 💍

These Asian Style Slow Cooked Lamb Shanks are such a delicious way to enjoy shanks and it’s so easy to make too! Serve it with some rice or bread and you’ve got an incredible dinner! Hopefully they’ll bag me a husband with a British accent? 🇬🇧😮‍💨😂

Ingredients
- 2kg of lamb shanks
- canola oil, to taste
- 2 large brown onions, thinly sliced
- 3 stems of lemongrass, thinly chopped
- 2 tbsp of fresh ginger, thinly chopped
- 8 cloves of garlic, thinly chopped
- 4 red chillies, sliced
- 1 tbsp of hot chilli powder
- 2 tsp of paprika
- 1/2 tsp of turmeric
- 1/2 tbsp of coriander powder
- salt, to taste
- 2 tbsp of soy sauce
- 4 cups of water
- 1 tbsp of brown sugar (or to taste)
- fresh coriander, for garnishing

Method
1. Heat the oil and sear the shanks until they turn light brown on all sides
2. Remove the meat and in the same pan, sauté the onions, lemongrass, ginger, garlic and chillies
3. Once the onions start turning brown, add the chilli powder, paprika, turmeric, coriander powder and salt
4. Mix well and fry off the spices for about 2 minutes
5. Add the lamb shanks, soy sauce, water and combine
6. Slow cook the shanks for about 2 hours on low heat
7. Adjust the seasoning with brown sugar
8. Garnish with fresh coriander
9. Enjoy!

I know i’ve been a little MIA… life + travel got a bit busy.

Spent some time in Germany 🇩🇪. Started in Heidelberg - the bakery culture there is insane. I’ve genuinely never seen that many types of bread in my life! Even the Aldi bakery section was elite 😍.

Also had a lot of German döner… like a lot. I get the hype now.

Tried German McDonald’s and the Mambo sauce??? Unexpectedly so good

Overall German pastries were amazing, coffee not so much (sorry).

Late night ice cream runs in the middle of Frankfurt were definitely a highlight.

Had some average Thai food but also one of the better lamb biryanis i’ve had in a while.

Now I’m in London 🇬🇧 for a bit, thinking of getting back into cooking content again..
and maybe… finding a British husband along the way 😭 (the accent 🥵).

These Golden Chilli Lemon Prawns are my go-to Christmas prawn recipe when I want something quick, bold and seriously impressive 🍤✨

Juicy prawns marinated in chilli, paprika and turmeric, pan-fried until golden, then piled onto sweet caramelised lemon-honey onions… it’s festive, fiery and comes together in under 15 minutes.

Perfect as a Christmas seafood recipe, prawn starter, or the star of your holiday spread. Trust me these disappear fast 👀🔥

Save this for Christmas Day 🎄

Prawn Ingredients
- 2 tbsp of olive oil
- 300g of prawns
- 1 tsp of hot chilli powder
- 1 tsp of paprika
- 1/2 tsp of turmeric
- salt, to taste
- juice of half a large lemon

Other Ingredients
- 2 tbsp of olive oil
- 1 large onion, sliced
- juice of half a large lemon
- 1 tbsp of honey
- salt, to taste
- 1 tbsp of coriander, chopped

Method
1. Marinate the prawns with hot chilli powder, paprika, turmeric, lemon juice and salt
2. Heat the oil and fry the prawns until golden brown then set aside
3. In the same pan, add another 2 tbsp of olive oil and add the onion
4. Add lemon juice, honey and salt and sauté until the onions are turn golden brown snd soft
5. Add the prawns on top
6. Garnish with coriander
7. Enjoy!

Throwback to a Christmas spread that still lives rent-free in my head 🎄

Roast lamb leg with gravy, cheesy cauliflower, herb roast potatoes, tangy tomato prawns, and a fresh salad to pretend there was balance. Proof that Christmas has always been my favourite excuse to cook everything 👩🏾‍🍳😋

Filo Cheesecake Cups 🎄✨
Crispy, buttery filo pastry cups filled with sweet, creamy cheesecake and topped with juicy Medjool dates- because Christmas desserts should look fancy but take minimal effort.

These little filo cheesecake cups are perfect for festive entertaining, last-minute guests, or when you want a dessert that screams holiday hosting without turning on MasterChef mode. Crunchy on the outside, creamy in the middle, and just sweet enough.

Save this for Christmas parties, dessert platters, or when you want to impress without stress 🤤

Ingredients
- 9 sheets of filo/phyllo pastry, cut into small pieces
- 100g of melted butter
- 250g of cream cheese, softened to room temperature
- 7 tbsp of icing sugar
- Medjool dates, cut into quarters, to garnish

Method
1. Layer pieces of filo pastry with butter in a muffin tray
2. Bake the filo pastry cups for about 15 minutes or until golden brown
3. Whip the cream cheese and icing sugar
4. Dollop the cream cheese mix into the cups
5. Top with a slice of date
6. Enjoy!

🎄 Christmas Carrot Cake (Moist, Spiced, Perfect for the Holidays!)

Cake Ingredients
- 1 and 1/4 cups of self raising flour
- 1 cup of plain flour
- 1 tsp of baking powder
- 1 tsp of cinnamon powder
- 200g of golden syrup
- 2 heaped tbsp of marmalade
- 3/4 cup of olive oil
- 1 cup of raw sugar
- 2/3 cup of any kind of milk
- 3 medium sized carrots, grated

Cream Cheese Glaze Ingredients
- 250g of cream cheese, at room temperature
- 2 cups of icing sugar
- 1 tbsp of water
- walnuts, to garnish

Method
1. Sift the flours and baking powder
2. Add cinnamon powder, golden syrup, marmalade, olive oil, raw sugar and milk before mixing well
3. Fold in the grated carrots
4. Bake at 180°C for about 1 hour, or until a skewer comes out clean
5. To make the glaze, mix the cream cheese, icing sugar and water together
6. Spread the glaze on top of a cooled down cake
7. Garnish with walnuts
8. Enjoy!
