✨ Nargisi Kofta ✨
A dish that’s pure royalty on a plate — boiled eggs wrapped in spiced mince, simmered gently in a rich, luxurious curry. In short, it’s India’s answer to Scotch eggs… but with all the bold flavors of a Mughlai kitchen!

“Nargisi” means narrow, often linked to the beauty of narrow, almond-shaped eyes. Since the eggs are snugly wrapped in mince, giving them that elegant shape, they’re called Nargisi Kofta.

I first learned to make this classic when I was just 16, during my very first cooking class — and I was instantly hooked by the layers of flavor, the richness of the curry made with garam masala, fried onions, tomatoes, and yoghurt, and the sheer artistry behind it.

If you love exploring true Indian (especially Mughlai) cuisine — deep, aromatic, and luxurious — then you’re in for a treat!

Bringing Back Wholesome Traditions: Idli with coconut chutney.

Growing up in Bombay, a city that embraces flavors from all over India, we were lucky to experience a rich variety of foods. One of my childhood favorites was idli—soft, pillowy, and comforting—especially when paired with the vibrant green chutney made by one of my aunts. That combination still brings back the best memories!

Yesterday, as the school holidays came to an end, I decided to bring back that nostalgia and made idlis for a family brunch. It was simple, wholesome, and so satisfying—just like I remember from childhood.

Idli is made with just rice and urad dal, naturally fermented overnight, with no additives, and steamed to perfection —just pure, nourishing food. And when I look at the ingredients now, I realize how we grew up eating whole grains, fresh coconut chutney, and naturally fermented foods without even thinking about how healthy it was!

This year, I’m committed to bringing back these traditional, wholesome recipes into my kitchen—not just for my family but also for my clients in my cooking classes. There’s so much wisdom in our ancestral foods, and I’m excited to rediscover and share it!

Homemade Kurmura (Puffed Rice)

This year, I am determined to replace store-bought snacks with healthier, homemade alternatives. One of my first steps in this journey is making kurmura, or puffed rice, at home. It is a light, crunchy snack made with simple ingredients and flavorful spices, and it feels so satisfying to create it from scratch.

There are many reasons for this shift, and they are all close to my heart. Homemade snacks are more affordable, fresher, and free from unnecessary preservatives or additives. Recently, I spoke to a pediatrician who shared some eye-opening research about preservatives in store-bought snacks. She explained how these additives can even contribute to behavioral changes in children. This was a wake-up call for me, and it reminded me of my childhood when my mum always made sure we had fresh, homemade snacks.

I know that life gets busy and making everything from scratch is not always realistic. But I believe that taking small steps toward homemade living can make a big difference over time. With this mindset, my goal for the new year is to incorporate more homemade snacks and meals into my family’s diet.

I am also excited to share this journey with others. Starting mid-year, I will be launching cooking classes to help others rediscover the joy of homemade food. Together, we can learn to make simple, wholesome recipes that not only nourish our bodies but also bring back the flavors of our roots.

This journey is about so much more than food. It is about reclaiming control over what we eat and building a healthier lifestyle for ourselves and our families. I can’t wait to see where this path leads and to help others along the way.

Ras Malai: A Sweet Craving Saga

Another sweet craving struck, and this time I took a shortcut to deliciousness! I whipped up a cheat version of Ras Malai using store-bought ricotta cheese. Yes, ricotta! Who has time to curdle milk and make chenna when sweet cravings demand immediate action?

In approximately 45 minutes, I had soft, creamy dumplings soaking in rich, saffron-infused milk. The result? Melt-in-the-mouth magic! Honestly, it tastes so good, you’d think I spent hours on it. (Let’s keep this between us—my family is convinced I’m a culinary genius.)

But seriously, what’s with these endless sweet cravings? Am I magnesium deficient? Or is it just my sweet tooth living its best life? Who knows! All I know is that every bite of this Ras Malai was worth it—and judging by the empty bowls around me, my family agrees.

Shortcut or not, this dessert is a total win. If you’re craving something sweet but don’t want to spend all day in the kitchen, give this a try. It’s proof that sometimes, cheating really does pay off!

Finding Joy in Simplicity

Lately, I haven’t been able to cook much due to some health concerns, but having Mum here in Australia has been such a blessing.

Cooking has always been therapeutic for me, and while I’m still feeling a bit weak and tired, I’ve been leaning into simple, no-fuss meals that come together quickly with pantry staples.

Yesterday, I made a quick chicken tikka with seasonal capsicums. I seasoned it with our signature garam masala, red chili powder, yogurt, ginger-garlic paste, and a pinch of salt. It was wholesome, flavorful, and incredibly satisfying.

Sometimes, it’s the simplest dishes that bring the most comfort.
