If you were celebrating, I just wanted to wish you a very Happy Easter!

I hope you had a lovely time with your friends and family and of course, ate plenty of chocolate!

I celebrated with a small batch of Jaffa hot cross buns which you can find on the channel and also finally perfected my chocolate chai recipe!

Masala pav pizza | Street food fusion | Australia | Reiko Ellis

Namaste Dosto! नमस्ते दोस्तो! (Hello friends)

Recently I was craving a fusion dish I haven't made for some time.

Masala pav is a street food consisting of a tomato based masala and capsicum on toasted rolls, which I've made many times. One night when I was having home-made pizza with my family, I got rather board of putting the same usual toppings on and decided to try out using this masala as the sauce base. It was so spicy and incredibly flavoursome!

This time I made it extra special by also making my own pizza dough. This part was passable but not fantastic. It seems I didn't quite knead the dough enough to get full elasticity, so it was hard to stretch. Next time I really should try the stand mixer!

International Women's Day | Reiko Ellis

To all the amazing, beautiful and talented women in my life, this day is for you!

I feel absolutely fortunate to be surrounded by so many inspirational ladies. Whether it's friends, family or my incredible partner, you keep me going. With your support I feel I can keep reaching for better.

This journey I began almost a year ago has been wrought with challenges and while it took something of a backseat when I started a new job and also moved house, I'm excited to finally be getting back into it shortly.

Still got many exciting plans for the future, so stick around and find out!

Aaj Holi hai!!
Today is Holi!!

Also known as the festival of colours, it celebrates the love of the deities Radha and Krishna and the triumph of good over evil. It's the festival with the crazy chaos of throwing colours everywhere! So, Happy Holi!

Sadly I missed out on my usual celebration as the festival I've been attending for the last few years was postponed due to an accident during the setup the night before. Hopefully people are okay and the event might still come soon in some form.

I also haven't gotten round to making gujiyas this year, but after drawing this digital one I'm suddenly craving them!

Mashed potato paratha | filled flatbread | Reiko Ellis

Namaste Dosto! नमस्ते दोस्तो! (Hello friends)

So, recently my partner made us dinner which included a side of fluffy garlic mashed potato.

There was a fair amount left, and we couldn't really decide on what to have it with…

Then I thought, this would totally work in a paratha! So I did that! There's ajwain and curry leaves in the dough. Into mine I also added some onion and chilli.

It was definitely a little trickier to work with than a normal aloo (potato) paratha filling, as it was sticky and little more runny. It was well worth the effort though! It was really tasty and paired very well with my spicy tomato chutney (also home-made).

Now I have a go to for leftover mash! Teamwork makes the parathawork. I think that's how it goes...

Australia Day | India Republic Day I Reiko Ellis

Namaste Dosto! नमस्ते दोस्तो! (Hello friends)

So January 26th is an important Day for two reasons…

So the first reason, it is Australia Day! A time to celebrate the great country I was born in.
And the second, it's India Republic Day! By amazing coincidence, these celebrations ended up on the same day!

The date for Australia day however might change in the future as this day also brings sadness for Indigenous Australians. I acknowledge that the colonial history of my home has not been one of kindness and understanding (likewise with India), but is it my sincerest hope that one day things will change and we have a date where all Australians feel they can celebrate our home.

I'm not generally one to share these opinions, but I feel it's hard to celebrate without mentioning this.

Sadly, the kitchen is still not quite ready for new videos…it's so close now! In the meantime, If you'd love to try a dessert that is a fabulous fusion of an Aussie classic with delicious Desi flavours, you must try these saffron and rose lamingtons! Aloo Keema | Beef & potatoes | Pakistan I Reiko Ellis

Namaste Dosto! नमस्ते दोस्तो! (Hello friends)

So I was feeling like a nice hearty meal last week and if there's one dish that’s quite easy to make and tastes so delicious, it's aloo keema! Essentially beef mince cooked in spices with pieces of potato. So what's not to like? I paired this with my usual multi-grain roti.

Unfortunately the recipe for this isn't yet on my channel…yet. If you'd like to try it out, let me know and I'll add it to my filming list.

The First mango lassi of the season I Reiko Ellis

Here in Melbourne the Summer is finally Summery! By which I mean it's been hot and humid these past few days.

Enter the first mango lassi of the season! This refreshing yoghurt-based drink is just perfect in this weather.

Wishing you a Merry Xmas and a very happy new year!

What a year it has been... In June I moved in with my girlfriend which was a massive process, I thought the first move was a lot to manage, but this was just crazy. At the same time I also started a new job. That was a bit hectic!

We just now finished most of the major upgrades to the house. So expect to finally start seeing some proper recipe videos from me in the new year!

If you're celebrating, I hope it's an absolutely incredible day!

How I celebrated food-wise this morning.

Quick Chana masala | Chickpea curry | North India I Reiko Ellis

Namaste Dosto! नमस्ते दोस्तो! (Hello friends)

Another entry in my mission to expose my partner to all the amazing food the subcontinent has to offer!

This time it's Chana masala, a homely curry made with chickpeas in a rich tomato gravy. This is my quick version using canned chickpeas and a processor to puree the tomatoes and finely chop the onion, so very little prep time is needed. It comes together in less than 1 hour and still manages a lovely deep flavour.

This time I added a couple of teaspoons of tomato paste and wow, that little bit really upped the richness. I'm never of the mind that a dish is perfect, there's always something you can do to improve it!

I paired this with my usual buttered multigrain roti

Jenna wasn't the biggest fan of the coriander flavour (it had about 1 Tbsp), but otherwise enjoyed it. At least I got the spice level right for her this time, hence why I added green chilli to mine. I like my spice, what can I say
