Sesame Crusted Tuna Tataki with Wakame Salad and Coriander & Ginger Ponzu.

Component Recipes1. Coriander & Ginger PonzuIngredients: 1/4 cup soy sauce, 2 tbsp fresh lime juice, 1 tbsp mirin, 1 tsp freshly grated ginger, 2 tbsp finely chopped coriander (cilantro).Method: Whisk all ingredients together in a small bowl. Let sit for 10 minutes to infuse.

2. Wakame SaladIngredients: 30g dried wakame seaweed, 1 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1 tsp sugar, 1 tsp toasted sesame seeds.Method: Rehydrate wakame in warm water for 5 minutes, drain, and squeeze out excess moisture. Toss with the remaining ingredients.

3. Sesame Crusted Tuna TatakiIngredients: 2 blocks of sushi-grade tuna loin, 2 tbsp white sesame seeds, 2 tbsp black sesame seeds, 1 tbsp neutral oil, salt.Method: Mix white and black sesame seeds on a plate. Season dry tuna lightly with salt, then press firmly into the seeds to coat all sides evenly.

Jalapeño Salsa VerdeIngredients
1 cup fresh parsley, 1 cup fresh cilantro, 1 deseeded jalapeño, 1 grated garlic clove, juice of 1 lime, 1/4 cup olive oil, salt.Method: Pulse all ingredients in a food processor until finely minced but still textured.
2. Whipped RicottaIngredients: 1 cup whole-milk ricotta, 1 tbsp olive oil, 1 tsp lemon zest, pinch of salt.Method: Blend in a food processor for 2 minutes until completely smooth and airy.

3. BBQ FennelIngredients: 1 fennel bulb (sliced into thick wedges), 1 tbsp olive oil, salt, pepper.Method: Toss wedges in oil, salt, and pepper. Grill on a hot BBQ or grill pan for 4–5 minutes per side until charred and tender.

4. Seared Tuna

Ingredients : 2 sushi-grade tuna steaks, 1 tbsp neutral cooking oil, salt.Method: Pat tuna completely dry and season with salt. Sear in a smoking-hot skillet with oil for exactly 45–60 seconds per side. Slice into thick pieces.
