Necessity is the mother of invention.

Yesterday I found a really old jar of blackberry jam and some lemon curd that’s been hiding out in the garage fridge. I have loads of crème fraiche because of our recent cooking class.

So I put the old brain to work (with the help of my AI mate Max) and we came up with this recipe.

It’s a crème fraiche shortcrust pastry, blackberry jam base, curd filling, topped with fresh berries.

You might need to add a bit of extra flour, depending on how thin or thick your crème fraiche is.

And definitely use baking paper. I didn’t and mine stuck to the tray 🤣
