Melville client with a few of his knives. 3 Japanese knives (boxed) no longer needs effort to slice. The the slight touch of one's hand and the weight of the knife is enough to slice through whatever is in the way.

When a knife is damaged and you think its not worth it. Think again!
This damaged Damashiro with a chunk missing. (don't ask how)

A number of process to reprofile this knife to its former glory including the use of steel putty to plug the bolster.
As good as new and less than a fraction of the cost of a new knife.

What a massive morning of sharpening. 2 clients, 65 knives. 2 minor flesh wound that broke through skin and 1 stab from the tip that drew blood and needed medical aid (bandaid).
Also new client gave me one of her fresh home made pate' as a thankyou.

99% True. However, I don't recommend sharpening your knives if you do not know how. You will damage the knife more or worse require medical attention.
