🍤🧄 Garlic Butter Shrimp Scampi Lasagna 🧄🍤
Ingredients:
For the Garlic Butter Shrimp:
1 lb large shrimp, peeled and deveined
3 tbsp unsalted butter
4 cloves garlic, minced
1/4 tsp red pepper flakes (optional for heat)
1/2 cup white wine (or chicken broth for a non-alcoholic option)
1 tbsp lemon juice
2 tbsp chopped fresh parsley
Salt and pepper, to taste
For the Lasagna:
9 lasagna noodles
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1 cup grated Parmesan cheese
1 large egg
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
2 tbsp olive oil (for cooking lasagna noodles)
For the White Sauce (Bechamel):
4 tbsp butter
4 tbsp all-purpose flour
2 cups whole milk
1/4 cup heavy cream
1/4 tsp nutmeg (optional)
Salt and pepper, to taste
Instructions:
Prepare the Garlic Butter Shrimp:
Cook the Shrimp:
In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes (if using), sautéing for about 1 minute until fragrant.
Add the shrimp to the skillet, cooking for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
Make the Scampi Sauce:
In the same skillet, add the white wine (or chicken broth) and lemon juice. Simmer for 2-3 minutes until slightly reduced.
Stir in the chopped parsley and season with salt and pepper. Return the cooked shrimp to the pan and toss to coat in the sauce. Set aside while you prepare the lasagna.
Prepare the Lasagna Noodles:
Cook the Noodles:
Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente. Drain and toss with a bit of olive oil to prevent sticking. Set aside.
Make the White Sauce (Bechamel):

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes, whisking constantly to form a roux.
Gradually whisk in the milk and cream, cooking until the sauce thickens, about 3-5 minutes.
Season with nutmeg (optional), salt, and pepper. Set aside.
Prepare the Cheese Mixture:
Mix the Cheese Filling:
In a medium bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, 1/2 cup of Parmesan, egg, Italian seasoning, garlic powder, onion powder, and salt. Stir until well mixed.
Assemble the Lasagna:
Layer the Ingredients:
Preheat your oven to 375°F (190°C).
In a greased 9x13-inch baking dish, start by spreading a thin layer of white sauce on the bottom.
Add a layer of lasagna noodles on top of the sauce.
Spread a layer of the ricotta cheese mixture over the noodles, followed by a portion of the garlic butter shrimp.
Drizzle some of the scampi sauce over the shrimp, then add a layer of white sauce.
Repeat the layering process (noodles, cheese mixture, shrimp, scampi sauce, and white sauce) until all the ingredients are used, ending with a final layer of noodles and white sauce on top.
Top with Cheese:
Sprinkle the remaining 1 cup of shredded mozzarella and 1/2 cup of Parmesan cheese evenly over the top of the lasagna.
Bake the Lasagna:
Bake:
Cover the lasagna with foil and bake in the preheated oven for 25-30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Serve:
Let the lasagna rest for 10 minutes before slicing and serving.
