2-3 pounds beef chuck roast or beef brisket

4 cloves garlic, minced

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
1 tablespoon Worcestershire sauce
1 cup beef broth
Salt and pepper, to taste
For the Potatoes:

1 1/2 pounds baby potatoes (or Yukon gold, cut into chunks)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:

Preheat Oven:

Preheat your oven to 325°F (165°C).
Prepare the Beef:

Season the beef chuck roast generously with salt and pepper.
In a large oven-safe skillet or Dutch oven, heat the olive oil over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.
Remove the beef from the skillet and set aside.

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease a Bundt pan or a deep oven-safe dish with non-stick spray or butter.
