Two Black Chooks We are a couple of home cooks who love cooking for ourselves and our friends. We use fresh, seasonal

“Two Black Chooks are a couple of self-taught home cooks that like travel accompanied with great local food and wines. Based on our experiences we offer our personal interpretation of great home cooking based on recipes and meals experienced from around the world. Whilst enjoying and creating 'authentic' dishes we also like to put an Australian inspired take on traditional recipes as well as using Australian native produce. We will use, where possible, our own home grown produce supplemented with local ingredients. We regard it as a personal challenge to help bring about an appreciation of home cooked style cuisine and to let its distinctive flavours and particular regional character brighten up our guests and their taste buds.”

Tonight's dinner made with uncooked green ballina prawns and octopus from last night's cook up was one of my favourite Thai dishes - Pad krapow talay. Magnificent and I'm now even a bigger fan of our 8 legged sea creatures and the mighty large ballina prawns. Loving the variety of fresh seafood up here in the northern rivers of nsw.

Last night's effort. Thai style grilled prawns and octopus to start. Followed by a fantastic snapper red Thai curry with jasmine rice. Loving the fresh, wild caught seafood from the nsw northern rivers.

Bought 2 fabulous sirloin steaks and had a simple "steak frites" with a peppercorn sauce and washed down with a fine Tassie Pinot Noir. A great neal to get the heme iron levels up.

With some much great seafood available we tried another country style itinerary dish using Jew fish. This Pesce in teglia al limone e oregano was brilliant and will certainly be a regular dinner.

Sticking with the 'cucina povera' theme we cooked up this 'Involtini de pollo' and stuck completely to the recipe. This is Chianti regional dish. In future we'd make a couple of additions including adding a side of greens.

The chooks went country Italiano. This Guazzetto di pesce e fagioli was outstanding. The red snapper is a great choice of fish for this dish. Prepped, cooked and served in 30 minutes

In collaboration with our good friend Meredith we cooked up a beef rendang and tricked it up a bit with a few extra veggies. Great flavours and took us back to our days in Asia.

Ok. Getting back into a bit of cooking at home. Last night was a Tin Eats pork loin in a honey, garlic, soy sauce. Absolutely brilliant and we paired it with some left over Thai veggie fried rice. We will certainly be having this again and a very affordable dish.
