Hey! It’s the pumpkin season! Here’s an easy recipe for a quick treat!

Main ingredients:
200g low-gluten flour, 20g milk powder, 110ml rice bran oil, 2 eggs, 80g caster sugar, 200g pumpkin puree, 8g aluminium-free baking powder.
Topping ingredients: 15g all purpose flour, 6g caster sugar, 10g salted butter (no need to soften).
✰How to make:
➢ Steam and mash 200g pumpkin purée.
➢Add eggs, oil and sugar to the pumpkin puree, whisk to combine.
➢ Sieve in low-gluten flour, milk powder and baking powder. Mix the ingredients until just combined.
➢ Divide the batter into cupcake liners, filling each cup 3/4 full.
➢For the topping, mix butter, flour and sugar with fingers to make them granular.
➢Sprinkle the topping on the batter.
➢Bake in the preheated oven at 175c or 180c until cooked, about 25-30 minutes.
