Creamy chicken risotto 🍚

A lighter, high protein take on a classic Cookidoo recipe (mushroom risotto) and honestly, you wouldn’t know it’s been lightened up!

I switched the mushrooms for 400g of chicken breast, reduced the oil and left the wine out to reduce the calories while adding a good protein boost.

The result? A creamy risotto the boys loved and left overs for tomorrow’s lunch.

Serves 4
- 485 calories per serve
- 40g protein per serve
