Breakfast or lunch under a very high ceiling.

Grand Café sits at Chifley Square in the city, drawing on Florentine design in a tall, calm room. It works as two spaces, a main dining room and an espresso bar, tied together by cool tones and a run of multi-coloured marble. The detail is in the joinery and restraint.

Keeping the old building, changing everything about it.

On the Gold Coast Highway, we kept the bones of the existing tavern and replaced the front with clean, simple forms behind a screen veil. Inside, monolithic brick, tall ceilings and planting let light and air move through. A central bar anchors the ground floor, supported by a gaming room and covered sports bar.

We turned a hotel penthouse into a rooftop bar.

Fleet sits on level 22 of the Vibe Hotel Melbourne, in what used to be the penthouse apartments. It holds ninety and reads like a private suite, with amber and dusty tones, custom furniture and a long bar where rum does most of the talking. The retractable roof and glass keep the city in view in any weather.

Brass, curves and a bit of theatre in Melbourne’s west.

The gaming room at Skyways runs on Art Deco geometry. Circular ceiling features, warm brass screening and quilted leather set the rhythm, with a richly patterned carpet underfoot. Off to one side, a garden terrace wrapped in brass and greenery gives players somewhere lighter to sit.
