Berry Breakfast Crumble
Serves 6
270cal

500g bag frozen mixed berries
2 tsp chia seeds
Drizzle of honey - optional

200g rolled oats
3 tbsp runny peanut or almond butter
3 tbsp honey or maple syrup
3 tbsp pumpkin seeds - optional
2 egg whites
Pinch of salt

Preheat oven to 160c fan.

Tip frozen berries in a bowl, sprinkle chia seeds and honey on top.

Use a food processor or thermomix to mix the crumble however it’s just as good or better if you mix it by hand. Spread over berries and bake for 35-40 minutes until golden and crisp.

Serve with big dollop of high protein yoghurt.
