Last month’s Sydney Hotel Summit by AHICE brought together more than 320 hotel owners, operators, developers, designers and industry partners to discuss the opportunities and pressures shaping Sydney and NSW’s hotel sector.

Across the day, discussions covered hotel performance and growth, tourism, new development and refurbishment, technology and the investment outlook.

Our Head of Design, Mike Watson, joined the Interior Design & Architecture Trends panel, where the discussion explored rising development costs, budget pressures, sustainability and adaptive reuse. Mike shared Dezign’s perspective on the importance of aligning design and budget from the outset, with a clear understanding of the owner’s investment objectives and required return.

It was a valuable opportunity to contribute to the discussion and hear perspectives from across the industry on the factors influencing hotel development across Sydney and NSW.

With 20 years’ experience in hotel and hospitality design, Sandrine Nehme has worked across new builds and refurbishments spanning a broad range of project types and budgets.

As an Interior Designer at Dezign, she focuses on design development and detail resolution, considering materials, site conditions, manufacturing requirements and construction methods to ensure the approved design can be successfully delivered.

Working closely with our design and production teams, Sandrine carries this thinking through from concept development and documentation to shop drawing review and production.

For Sandrine, the most rewarding part is seeing the design move from concept and drawing through to the finished space.

Construction continues as the former Mercure Clear Mountain enters the final stages of its transformation into Peppers Retreats, Resorts & Hotels Clear Mountain.

As works advance across the property, the scale of the refurbishment is becoming increasingly evident, bringing the vision for Queensland's first five-star retreat in the City of Moreton Bay one step closer to reality.

Having led the project from the initial discovery phase through to interior design and construction, we’re looking forward to seeing the hotel officially launch as Peppers Clear Mountain next month.

Perth Hotel demonstrates how our Discover, Design, Deliver methodology responds to the realities of complex hotel refurbishment projects.

Working within a refurbishment budget established prior to COVID, a live operating hotel, evolving Crowne Plaza brand standards and the need to maximise commercial return, every decision required careful consideration from the outset.

The Discovery phase established the strategic framework for the project, informing investment priorities, design decisions, procurement and delivery.

By aligning commercial objectives with design outcomes from day one, the project was completed three weeks ahead of schedule while delivering a guest experience that supports the hotel's long-term performance.

The conversation comes at a time when higher construction costs and development constraints are reshaping Australia's hotel pipeline, placing greater emphasis on the refurbishment and repositioning of existing assets.

Moderated by Juliet Ashworth (CHADA), in addition to Mike, the panel features Angela Biddle (FK), Audrey De Filippis (Athenablue), Chris Grinham (H&E Architects) and Julie Ockerby (WMK Architecture), making for what is set to be a robust and insightful discussion.

𝗣𝗿𝗼𝗷𝗲𝗰𝘁 𝗖𝗼𝗺𝗽𝗹𝗲𝘁𝗶𝗼𝗻 | 𝗖𝗿𝗼𝘄𝗻𝗲 𝗣𝗹𝗮𝘇𝗮 𝗣𝗲𝗿𝘁𝗵

Working closely with hotel owner Marlow, IHG Hotels & Resorts General Manager Tony Hart and IHG Senior Manager, Design, Phillip Callister, Dezign was engaged to lead the interior design and refurbishment of 189 guestrooms and all river-facing tower bathrooms across 13 levels at Crowne Plaza Perth.

The contemporary design draws inspiration from Perth's unique landscape, combining warm earthy tones of the desert with cool blue hues of the ocean to create interiors that reflect the city's identity.

Our integrated Discover, Design, Deliver methodology enabled the project to be delivered through a staged, floor-by-floor programme within a live operating hotel, with completion achieved three weeks ahead of schedule despite adjustments required around major sporting events in Perth.

From the earliest strategic decisions through to construction, every stage of the project was aligned to a clear commercial, operational and design vision. The completed refurbishment has since repositioned Crowne Plaza Perth in line with contemporary brand standards, strengthened premium room revenue opportunities and supported the renewal of a major airline accommodation contract.

Mike Watson, our Head of Design, has spent his career specialising in hotel and hospitality projects.

With experience spanning architecture, hotel interiors and construction, he brings a practical understanding of how projects are planned, delivered and operated.

Mike leads every hotel project at Dezign. His approach balances operational functionality, brand standards and the guest experience, ensuring each project is considered from both a creative and delivery perspective.

The announcement this week that Saint Kilda Beach Hotel will reopen as Novotel St Kilda marks an exciting new chapter for one of Melbourne's most recognisable beachfront hotels.

Working alongside ERDI, the Dezign team is responsible for the interior design and refurbishment of all 80 guestrooms and guest corridors, helping shape the guest experience for the hotel's next evolution.

The project follows Dezign's successful delivery of Novotel Sydney City Centre and Novotel Surfers Paradise Penthouses, continuing our involvement across the Novotel portfolio.

The design reflects a deep connection to St Kilda, with references woven throughout the custom carpet design and custom wallpapers inspired by the iconic Ackland Street cake shops. The result balances the expectations of a globally recognised hospitality brand while drawing inspiration from the relaxed coastal character that has long made St Kilda such an iconic destination.

With works well underway, we're pleased to share a glimpse into what guests can expect.
