Tomato Chutney Recipe

Ingredients: 1 kg ripe tomatoes,
chopped 1 large onion,
finely chopped 2-3 green chilies,
finely chopped (adjust to taste) 1 inch ginger, grated 4-5 cloves garlic,
minced 1/2 cup vinegar (white or apple cider)
1/2 cup sugar (adjust to taste)
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/4 teaspoon turmeric powder
1/4 teaspoon red chili powder (optional)
Salt to taste
2 tablespoons oil

Instructions:
Heat oil in a large pan or pot over medium heat. Add cumin seeds and mustard seeds.
Let them splutter.
Add chopped onion and sauté until golden brown.
Add grated ginger and minced garlic.
Sauté for a minute until fragrant.
Add chopped green chilies and sauté for another minute.
Add chopped tomatoes, turmeric powder, red chili powder (if using), and salt.
Mix well.
Bring the mixture to a boil, then reduce heat and simmer for about 30-40 minutes, or until the tomatoes are soft and the chutney has thickened.
Stir occasionally to prevent sticking. Add vinegar and sugar.
Mix well and continue to simmer for another 10-15 minutes, or until the chutney reaches your desired consistency.
Adjust sugar and salt to taste.
Remove from heat and let the chutney cool completely.
Store in sterilized jars in the refrigerator.

The chutney will keep for several weeks.
