Hilsa is not just a fish; it's an emotion, a tradition, an integral part of Bengali culture. The Hilsa of the Padma, the Hilsa of the Meghna—this river-flavored fish is intertwined with countless stories, poems, and memories. And when that Hilsa blends with fragrant pulao rice, it gives birth to the incomparable Hilsa Pulao. A bearer of royal heritage, Hilsa Pulao remains a star attraction in Bengali cuisine, gracing festive occasions, celebrations, and family gatherings. Today, we'll explore a simple recipe for Hilsa Pulao and delve into its historical background.

Hilsa Pulao Recipe:

â–ļ Ingredients:

Hilsa fish - 2 middle sections (about 1 kg)
Pulao rice - 3 cups (1 kg)
Chopped onions - 4/5 medium-sized
Ginger - 4 pieces (1 inch each)
Fried onions (beresta) - 2 tablespoons
Almonds - 1/2 cup
Sour yogurt - 1/2 cup
Garam masala powder - 1 teaspoon
Bay leaves - 2
Cardamom pods - 4-5
Cinnamon stick - 1 small piece
Green chilies - 10-12 (adjust to taste)
Oil - 1/2 cup
Ghee - 2 tablespoons
Water - 4 cups
Milk - 1 cup
Salt - to taste
Sugar - 1 teaspoon

📜 Note: ±: Ingredients can be increased or decreased to taste.

â–ļ Marinating the Hilsa:

Cut the Hilsa fish as desired, wash thoroughly, and set aside. In a blender, combine chopped onions, ginger, almonds, fried onions, sour yogurt, 6-7 green chilies, and salt. Blend well. Coat the washed Hilsa pieces with this mixture and marinate for 1 hour in the refrigerator.

â–ļ Cooking Process:

Heat half a cup of oil in a large pot. Add bay leaves, cardamom pods, and cinnamon stick; sautÊ briefly. Carefully place the marinated Hilsa pieces in the oil, one by one. Pour the remaining marinade over the fish.

Cover the pot and cook over medium heat for 7-8 minutes. Uncover, flip the fish pieces, and cook covered for another 7-8 minutes. Once the fish is cooked, carefully remove the pieces and set aside.

Stir the remaining masala well and cook for a few minutes. Add 1 teaspoon of sugar and sautÊ. Then, add 1 teaspoon of garam masala powder and sautÊ further.

When the oil starts to separate from the masala, add the washed rice and sautÊ well. Once the rice is lightly toasted, add 4 cups of boiling water, 1 cup of milk, salt to taste, and 5-6 green chilies. Stir well, cover, and cook.

At this stage, keep the heat at medium-high. Once the water starts to boil, uncover, stir, and cover again for a few minutes. Reduce the heat to low-medium, cover, and continue cooking.

When the rice is almost visible on the surface, lower the heat, stir gently, cover, and simmer. Once the rice is 90% cooked, remove half of the pulao and transfer it to a separate dish.

Arrange the cooked Hilsa pieces over the remaining pulao in the pot. Spread the reserved pulao evenly over the fish. Cover and simmer for a few more minutes.

Our traditional Hilsa Pulao is ready! Carefully transfer the pulao to a serving dish. Garnish with sliced cucumbers, carrots, and onions. Serve hot to your loved ones.

History of Hilsa Pulao:

Hilsa is deeply intertwined with the history and culture of Bengal. It has held a special place in Bengali cuisine since ancient times. It is believed that Hilsa Pulao originated in the royal kitchens during the Mughal era. It was served at lavish feasts and ceremonies hosted by the Nawabs. The abundance of Hilsa in Bengal's riverine landscape further enhanced its popularity. Over time, it made its way into the homes of ordinary people and became a unique addition to the Bengali culinary repertoire.

â–ļ Benefits of Health:
Rich in Omega-3 fatty acids (EPA and DHA), hilsa fish are great for heart health, lower inflammation, and support of brain function. It provides additionally calcium, vitamin D, and protein.
Depending on the kind of rice (brown or otherwise), rice supplies carbs for energy as well as fiber, B vitamins, and minerals including magnesium. Often a longer grain type and perhaps with a little lower glycemic index than shorter grain white rice, pulao rice is used in the recipe.
Onions have anti-inflammatory action and antioxidants.
Renowned for its anti-inflammatory and digestive properties is ginger.
Yogurt offers probiotics, which help intestinal function. It provides also protein and calcium.
Almonds include good fats, fibre, protein, vitamin E, and magnesium.

â–ļ Diet Issues:
The recipe calls for a lot of oil and ghee, which are heavy in both unsaturated and saturated fats. Although some dietary fat is necessary, too much of any kind can lead to weight gain and raise heart disease risk. Using less oil or better substitutes could help to offset this.
White rice might produce blood sugar increases and has less fiber than brown rice if you are using white pulao rice.
Salt: The recipe calls for taste-wise suitable salt. Salt intake should be under observation since too much of it might cause high blood pressure.
We hope you enjoyed the recipe. Try this recipe at home to prepare delicious Hilsa Pulao and share your valuable feedback in the comments. Happy cooking!

In today's video, we'll make a delicious, buttery smooth white sauce pasta perfect for any occasion! Whether you're a seasoned cook or new to the kitchen, this recipe is quick and easy to make!

White sauce pasta, also known as BÊchamel sauce pasta, originates in French cuisine. BÊchamel, a simple mixture of butter, flour, and milk, is one of the five "mother sauces" of French cooking. While initially used in classic French dishes, this sauce gained popularity in Italy and other parts of the world as a creamy, versatile base for pasta. Adding protein and cheese has led to countless variations of white sauce pasta, each highlighting regional flavors and ingredients.

I'll show you step-by-step how to make the perfect BÊchamel sauce, combine it with your favorite pasta, and customize it with your preferred ingredients.

White Sauce Pasta Recipe
