Chicken Kosha
Ingredients:
Chicken – 1 kg (bone-in, curry cut)
Onions – 4 large (finely sliced)
Ginger paste – 2 tbsp
Garlic paste – 2 tbsp
Yogurt – 1/2 cup (whisked)
Tomatoes – 2 medium (finely chopped
Green chilies – 3 to 4 (slit)
Mustard oil – 5–6 tbsp
Bay leaves – 2
Whole garam masala –
Green cardamoms – 3
Cloves – 4
Cinnamon – 1 inch
Red chili powder – 1.5 tsp
Turmeric powder – 1 tsp
Coriander powder – 2 tsp
Cumin powder – 1 tsp
Garam masala powder – 1 tsp
Salt – to taste
Sugar – 1 tsp
Water – as needed

Instructions:
1. Marinate the Chicken:
Mix chicken with turmeric, red chili powder, salt, and half the yogurt.
Let it rest for 1 hour.
2. Fry the Onions:
Heat mustard oil in a heavy-bottomed kadai.
Add sugar, let it caramelize.
Add bay leaves and whole garam masala.
Add sliced onions, sauté till golden brown.
3. Add Ginger-Garlic & Spices:
Add ginger and garlic paste, sauté until raw smell disappears.
Add chopped tomatoes, green chilies, remaining yogurt, and all powdered spices.
Cook till oil separates.
4. Cook the Chicken:
Add marinated chicken. Mix well.
Bhuno (sauté) on medium-high heat for 15–20 minutes, stirring occasionally.
5. Simmer:
Add 1/2 cup hot water.
Cover and cook on low flame till chicken is tender and masala coats it well (20–25 mins).
6. Final Touch:
Sprinkle garam masala, mix gently, and rest covered for 5 mins.
