ধুন্দল ভর্তা (Sponge Gourd Mash) গ্রামীণ পরিবেশে খুব জনপ্রিয় একটি খাবার। এটি সহজ এবং সুস্বাদু। এখানে আপনার জন্য ধুন্দল ভর্তার একটি রেসিপি দেওয়া হলো:

উপকরণ:
ধুন্দল: ১-২ টি (মাঝারি মাপের)
সরিষার তেল: ২ টেবিল চামচ
পেঁয়াজ : ২ টেবিল চামচ
কাঁচা মরিচ: ২-৩টি (স্বাদ অনুযায়ী)
শুকনা মরিচ: ২টি (ভাজা)
লবণ: স্বাদ অনুযায়ী

প্রস্তুত প্রণালী:
ধুন্দল আগুনে পোড়া:
প্রথমে ধুন্দুল কাঠিতে গেঁথে আগুনে পুড়িয়ে নিবো তারপর ধুন্দুল পানিতে ভিজিয়ে ঠান্ডা করে খোসা ছাড়িয়ে ভালো করে পরিস্কার করে নিতে হবে।
এখন কাঁচা মরিচ ও পিয়াজ আগুনে পুড়ে নিব তারপর আগুনে পুড়ে পরিষ্কার করা ধুন্দুল,কাঁচা মরিচ ও পিয়াজ শিলপাটায় বেটে মিহি করে পরিমান মত লবন ও সরিষার তেল দিয়ে ভালো ভাবে মেখে নিলে তৈরী হয়ে যাবে সুস্বাদু ধুন্দুল ভর্তা।

ধুন্দল খুব বেশি সিদ্ধ করবেন না, এতে স্বাদ নষ্ট হয়ে যেতে পারে।
পেঁয়াজ এবং সরিষার তেলের পরিমাণ আপনার পছন্দ অনুযায়ী বাড়াতে বা কমাতে পারেন।

Sponge Gourd Mash is a very popular dish in rural areas. It is easy and delicious. Here is a recipe for Sponge Gourd Mash for you:

Ingredients:
Dhundol: 1-2 (medium size)
Mustard oil: 2 tablespoons
Onion: 2 tablespoons
Green chilies: 2-3 (according to taste)
Dried chilies: 2 (roasted)
Salt: According to taste

Preparation method:
Burn Dhundol on fire:
First, stick the Dhundol on a stick and burn it on fire. Then soak the Dhundol in water, cool it, peel it and clean it well.
Now, we will burn the green chillies and onions on the fire, then grind the cleaned dhundul, green chillies and onions on a mortar and pestle and mix them well with a sufficient amount of salt and mustard oil to make delicious dhundul bharta.

Do not boil the dhundul too much, it may spoil the taste.

You can increase or decrease the amount of onion and mustard oil according to your preference.
