Hot cross bun French toast 🀀 Happy Easter everyone! hope you all have a lovely bank holiday β™₯️ Ingredients (serves 2-3): 6 hot cross buns (my fave are ) 1 cup milk 1 egg 0.25 tsp orange extract 0.5 tsp vanilla extract K**b of butter (for cooking) Maple syrup, banana and blueberries to serve 🫐

Thai red curry noodles 🍜 Ingredients (serves 2): For the curry: 2 tbsp red curry paste 1 tin coconut milk 1 tsp honey 1 tsp soy sauce 1 tsp fish sauce For the chicken: 2 chicken breasts 1 tsp sesame oil 1 tsp red Thai curry paste To serve: 2 servings ramen noodles Green veggies (or veggies of choice) Spring onions, diced Firstly, make the curry sauce by mixing the curry paste, coconut milk, fish sauce, soy sauce and honey. Slowly heat on the hob whilst the chicken cooks. Marinate the chicken breasts with the curry paste and a splash of sesame oil. Cook in the airfryer for 20 mins at 200 degrees C. Prepare your veggies and noodles according to pack. Once everything’s cooked, slice your chicken and serve 🍜

Fajita chicken pasta 🌢️ Ingredients (serves 2): 2 chicken breasts, sliced into strips 2 portions pasta (I used 160g dry weight) 2 bell peppers, sliced 1 red onion, sliced 2 garlic cloves, finely chopped 1 tbsp extra virgin olive oil 1 tsp paprika 1 tsp cumin 1 tsp chilli powder 0.5 tsp oregano Salt and pepper (to taste) 1 tbsp tomato puree 100g low fat soft cheese 100ml chicken stock Handful chopped parsley / coriander Grated Parmesan to serve Approx (per portion) Cals: 650 Protein: 50g

Gochujang chicken, rice and cucumber salad πŸ₯’ Ingredients (serves 2): For the chicken: 2 chicken breasts 1 tbsp gochujang paste 2 tbsp soy sauce 1 tbsp honey 1 tsp sesame oil 2 cloves garlic, minced Cucumber salad: Half a large cuumber 2 tbsp rice vinegar Pinch of salt 1 tsp sugar 1 tsp sesame seeds Gochujang mayo sauce: 1 tbsp light mayo 0.5 tsp gochujang paste Pinch of salt 1 tbsp water Served with: 2 portions rice Spring onions Sesame seeds Firstly, mix the gochujang paste, soy sauce, honey, sesame oil, garlic and chicken together and let marinate for a while. Then add to an airfryer tray and cook for 20 minutes at 200 degrees C. Whilst that’s cooking, prepare your rice according to instructions, you could use microwave rice if easier. Next, make the cucumber salad by roughly chopping your cucumber, then adding your rice vinegar, salt, sugar and sesame seeds together. Once the chicken has cooked, let it rest for 5 mins before serving. Serve up with the rice, cucumber salad, spring onions, sesame seeds and a little drizzle of the sauce and enjoy!

lemon cheesecake chia pudding πŸ‹ Just to note I made extra chia pudding to keep in the fridge to add to yoghurt bowls, etc. but if you want to just make enough for this recipe, I’d just 4 tbsp chia pudding and 3/4 cup of milk. Ingredients: 6 tbsp chia pudding 1 tbsp maple syrup 1 tsp vanilla extract 1 cup milk 2 tbsp lemon curd (1 tbsp in each) 300g Greek yoghurt (150g in each) 2 digestive biscuits, crushed (1 biscuit in each) Firstly, mix the chia seeds, maple syrup, vanilla extract and milk together. Then leave to set in the fridge for a few hours, mixing half way through. Add a tbsp lemon curd to a dish, then the yoghurt, chia pudding mix and crushed biscuits on top. Enjoy!
