🍋Lemon in rice — unexpected or genius?

Welcome back to The Leek Diaries — Episode 5. 🍂
Just leek, carrots, tomatoes and rice — and somehow the best thing we’d eaten in a long time.
Simple, humble, honest food. The kind that reminds you that you don’t need much to eat really, really well.
Full recipe below 👇

Ingredients:
• 2-3 leek stalks, sliced into rounds
• 1 large carrot, cut into larger pieces
• 1 jar chopped tomatoes
• 1 cup rice
• 1 vegetable stock cube
• juice of half a lemon
• salt, black pepper, garlic powder & paprika
Method:
Sauté the leek and carrot in a little olive oil until slightly softened.
Add the tomatoes, 2 cups of water, the stock cube and rice. Let it simmer on low heat for about 20 minutes.
Meanwhile, mix the lemon juice, spices and a little water in a small bowl — use the tomato jar to catch any remaining tomato. Stir well and add to the rice.
Let it simmer for another 5-6 minutes until the rice is rich, juicy and full of flavour. 🤍

We ate it with some homemade focaccia 🤤.
Recipe in the next episode. 🥰

Welcome back to The Leek Diaries — Episode 4. 🍂
I’ve been buying this Bavarian salad from the supermarket for years. Then one day I decided to make it myself — no preservatives, no mystery ingredients. Just real food.
Turns out five real ingredients beat a list of preservatives every single time.
Full recipe below 👇

Ingredients:
• 700g baby potatoes, skin on, cut into large chunks
• 200g leek, thinly sliced
• 300g smoked sausage, diced
• 2-3 pickles, diced
For the dressing:
• 4 tbsp mayonnaise
• 2 tbsp yogurt
• ½ pack cream cheese with herbs (Philadelphia)
• 1 tsp mustard
• 1 tsp hot sauce
• a splash of pickle juice
• salt & black pepper

Method:
Cut the potatoes into large chunks and boil unpeeled until tender. While they cook, thinly slice the leek and dice the sausage and pickles.
Mix all the dressing ingredients together until smooth.
Once the potatoes are slightly cooled, toss everything together until well coated.
Serve immediately or let it sit in the fridge — it gets even better the next day. 🤍

Save this and skip the supermarket next time. 📌

High-Protein Bagels in 20 Minutes (No Yeast!)

These bagels are just cottage cheese + flour — no yeast, no proofing. Mix, shape, bake, done. Packed with protein and ready faster than it takes to preheat most ovens.

Ingredients:
🥣 1 tub cottage cheese (200g)
🥣 1 cup flour
🧂 1 tsp salt
🧂 1 tsp baking powder
🌿 Basil

Mix everything into a medium-firm dough, divide into 4, shape into balls, poke a hole in the center and flatten slightly. Brush each one with egg wash then bake at 350°F/180°C for 20 min until golden.

I topped mine with seasoned cream cheese, a tomato slice, crumbled feta, and pesto. 🥯

Welcome to The Leek Diaries — Episode 3. 🍂
This is the recipe that made me fall in love with leek in the first place.
My grandmother makes this leek stew every time I visit — and every time she asks what I want her to cook, my answer is always the same. Always.
This time I made it with chicken instead of pork — but the warmth, the smell and that feeling of being home? Exactly the same.

Full recipe below 👇

• ~1kg leek, sliced into rounds
• 500g boneless chicken thighs, cut into pieces
• 3-4 tbsp tomato paste (I used homemade)
• 1 cup chicken broth
• salt, black pepper, smoked paprika, garlic powder & fenugreek

Method:
Brown the chicken in a little olive oil in an oven-safe pan with all the spices. Add the leek and sauté until slightly softened. Stir in the tomato paste and broth. Transfer to a preheated oven at 180°C for 20-30 minutes.

Save this for the next time you need a taste of home. 📌

Fall in a bowl. 🍂
Creamy pumpkin, leek and red lentil soup — warming, hearty and packed with flavour.
The curry, turmeric and smoked paprika take it to another level — and that crumbled cheese on top? Non-negotiable.

Ingredients:
• leek, sliced into rounds
• pumpkin, diced
• red lentils
• milk
• fresh parsley
• salt, black pepper, nutmeg, curry, smoked paprika & turmeric
• a k**b of butter
• pumpkin seeds & crumbled cheese to serve

Method:
Sauté the leek in a little olive oil until soft. Add the diced pumpkin and fresh parsley, cover with water and simmer for a few minutes.
Add the red lentils and spices and cook until the lentils are tender.
Stir in the milk and blend until smooth and creamy.
Serve topped with fresh parsley, pumpkin seeds and crumbled cheese. 🤍
Save this for your next cold autumn day. 📌

Welcome to The Leek Diaries — Episode 1. 🍂

Phyllo pie just got a glow-up. Meet Banitsa s Praz (Phyllo pie with Leek) — but not as you know it.
Sun-dried tomatoes. Goat cheese. Leek. A combination I had no idea would work — until it did.

Ingredients:
• 500g leek
• 3-4 sun-dried tomatoes
• 200g crumbled goat cheese
• 5 eggs
• 3 tbsp yogurt
• 10 phyllo pastry sheets
• 1 tbsp butter
• oil from the sun-dried tomatoes
• salt & black pepper

Method:
In a pan, melt the butter with a little of the sun-dried tomato oil. Add the sliced leek, season with salt and black pepper and sauté until soft.
Add the finely chopped sun-dried tomatoes, stir and transfer to a bowl to cool slightly.
Once cooled, add the crumbled goat cheese and 2 eggs and mix well.
Lay one phyllo sheet flat, drizzle with a little sun-dried tomato oil, place a second sheet on top and add 2-3 tablespoons of filling along the length. Roll into a log. Repeat until the filling is used up — I got 5 rolls.
Arrange the rolls in a baking dish as shown in the video.
In a bowl, whisk together the yogurt, remaining eggs, a little sun-dried tomato oil and a pinch of salt until smooth. Pour over the rolls.
Bake in a preheated oven at 180°C for 20-30 minutes or until golden on top. 🤍

Save this for your next cosy autumn bake. 📌

I was craving stuffed peppers… what came out of the oven was somehow better. 🌶️

No stuffing. No fuss. Just everything you love about stuffed peppers — in one pan.

This is my fridge cleanout version and honestly, I’m not going back to the original.

Ingredients:
• 4 red peppers
• 2 onions
• 500g ground beef
• 4 tbsp tomato paste (I used homemade)
• 4 garlic cloves
• 1 cup rice
• 4 cups water or beef broth
• salt, black pepper, smoked paprika, oregano, garlic powder & fenugreek
• fresh parsley to finish 🌿

Method:
In an oven-safe pan, heat a drizzle of olive oil and brown the ground beef over medium heat. Keep it in larger chunks — it makes a difference.
Add the chopped onions and peppers and cook until slightly softened.
Stir in the garlic, spices and tomato paste.
Add the rice and water or beef broth and mix well.
Transfer the same pan straight into the oven at 180°C for 25 minutes.

One pan. Zero extra washing up. 👌

Finish with fresh parsley and serve straight from the pan. 🌶️

Save this for your next “I have nothing to cook” moment. 📌
