16 mesh pepper and garlic salt , oak pellets . 250 all the way through to 205 no wrap until resting . I can be 6-7 hours...

16 mesh pepper and garlic salt , oak pellets . 250 all the way through to 205 no wrap until resting . I can be 6-7 hours in sometimes and still not have bark like this , if your looking you ain’t cooking 👍

Hello all. I was just looking to get an expert opinion on some venison. I had a deer hanging, hide off for five days in my barn. I probed the meat with a thermometer and it read 45°. I was wondering if it is safe to eat.? After taking off the dried up dark part on the outside the meat still looked and smelled perfect. Opinions? I typically don’t age my deer, so that’s why I am asking. Thanks in advance.

Man for y'all that cook every day like this I give y'all props. I cooked for about a 150 for my first time at my daughter's wedding. Only getting about 2 hrs of sleep Saturday to have it ready for Sunday afternoon kicked my ass. It probably would not have been that bad if I wasn't the one walking her down the aisle without barley any sleep. I did get any complaints only positive feedback. I didn't get a pic of it after it was done because I was too busy. Not pictured but did 2 big pans of baked beans and Mac and Cheese
