Hola Coasters!

Winter is almost over, so this week's Special is one of our favourite comfort foods!

It's a stew called "Carne en su jugo," which translates as "meat in its juices." It is a hearty, filling dish from the centre of Mexico, actually from the Tequila area!.

Small pieces of beef are cooked in their juices and then mixed with whole pinto beans, green tomatillo sauce and served with crispy crumbled bacon, green onions, lime and cilantro ... a Tequila shot goes beautifully with it : )
