We’ve always liked Sanneng 三能食品烘焙器具 for how practical their bakeware is. Good heat transfer, sturdy construction, reliable non-stick coating, and designs that are made with the actual baking process in mind.

Need some new menu inspiration? Start with fruit from the remarkably varied landscapes of Peru.

Along the coast, across the Andes, and into the Amazon, changes in altitude, climate, and soil create very different growing conditions from one region to the next.

Among the fruits and ingredients found there are golden berry, golden pineapple, dragon fruit, and turmeric—each bringing its own acidity, sweetness, colour, or earthiness.

Pacific Fruit works with produce from seven regions across Peru, processing it close to harvest into shelf-stable purées and juices.

That connection between ingredient and place is what drew us to this Peruvian brand, and why we are pleased to welcome it into Gusta’s collection.

Marukai is based in Wakasa Obama, Fukui, a coastal region with a long history of preserving seafood and making hishio, a fermented fish seasoning.

When this local tradition had almost disappeared, Marukai worked to bring it back, developing its own fermentation method in the 1990s.

For Uni Hishio, sea urchin is made into a paste, then carefully fermented and aged for approximately three months.

Temperature has to be closely controlled, and the mixture is stirred almost every day. Even the recipe took around two years to refine before the makers found that the natural sweetness of onion brought out the uni without overpowering it.

The result is rich, savoury and unmistakably uni—not a replacement for fresh sea urchin, but another way to enjoy the flavour people crave.

Try it with pasta, risotto, eggs, rice or squid sashimi. Or keep it simple and add a spoonful wherever you wish there were more uni.
