Had the pleasure of checking out Pentictons newest coffee shop today! One14 Coffee Co.

This cafe is located in the Cannery Trade Centre on Fairview road - first step in and I was greeted by the aroma of baked goods, DELICIOUS coffee and a fun, unique pink atmosphere (also Rexy). Definitely a must-try cafe, while you’re there pick yourself up a cute graphic tee or tote bag!

BRAZILIAN LEMONADE 🍋☀️
This lemonade (it’s actually a limeade) has been trending on Tik Tok for MONTHS. Well, I finally tried it and it’s no joke. This lemonade is made with limes, sugar, water and condensed milk - it’s tastes like dessert in a glass.

Furthermore, here’s what you’ll need:
• 4 juicy limes (smooth skin)
• half a can of sweetened condensed milk
• 4 cups of water
• 1/3 cups of granulated sugar
• a fine strainer
• a blender

Start off by washing your limes and cutting them into 1/8ths. Once that’s done grab your blender and put the limes, water, sugar and sweetened condensed milk in. Now blend, but make sure you’re pulsing the blender. Once everything’s all good and mixed together, you’re gonna need to strain it to get all the chunks and skin out - I used a fine strainer and cheese cloth to make sure no clumps got into my drink (🤢). Strain into a separate bowl and use a spoon to press all the juices out. Finally pour into a glass over ice and serve!

You can adjust this recipes sweetness or creaminess by simply adding more sugar (sweetness) or more sweetened condensed milk (creaminess)!

Now that we’re back in action - showcasing here are the Spicy Tuna Sushi Tacos from . These sushi tacos are not only unique but a GO-TO order when visiting Earls in Penticton.

These soy wraps are filled with mango, sriracha mayo, spicy tuna, and garnished with shiso (this is a Japanese herb apart of the mint family). 🍣 Yummy!

KUIA’S (best of bridge) PAPAYA AVOCADO SALAD 🥑✨Recipe makes 2-4 servings

This salad has been made by my Kuia (grandma in māori language) for years and years, it’s always been a staple at dinner. It is loved by everyone who’s tried it! Not only is this salad the most DELICIOUS it’s also unique and incredibly easy to make.

HOW TO: SALAD 🥗

1 head romaine lettuce
1 ripe papaya, de-seeded, peeled and sliced
1 large avocado, peeled and sliced
1 cup red onion slices

Clean, dry and chop up your romaine lettuce, take your papaya and peel the skin off - next, cut it in half. You’ll want to de-seed your papaya saving 2tbsp for your dressing, then cut it into chunks and add to the salad. For your peeled avocado you can either add chunks or slices into the salad, whichever you prefer. Next slice up some red onions and throw in! The salad portion is done - Now onto the dressing. ➡️

HOW TO: PAPAYA SEED DRESSING

1/4 cup sugar
1/2 tsp. dry mustard
2 tsp. salt
2 Tbsp. papaya seeds
1/2 cup white wine vinegar
1/2 cup salad oil
2 green onions, finely chopped

Combine all dressing ingredients into a blender - you’ll want to blend this until your papaya seeds are the appearance of ground pepper. Store the dressing in the refrigerator until you are ready to serve your salad. Shake it up, drizzle it on, toss and enjoy!
VOILA, Papaya Avocado Salad 🥑!

Tip: Save some extra papaya seeds and make a batch of this dressing to store for other salads as well! 👍🏻

✨Comforting and highly customizable, Spicy Pasta Alla Vodka✨ (2 Servings)

Ingredients:
•1/4 cup olive oil
•2 cloves of garlic
•1/4 cup red onion, diced
•1/4 cup tomato paste
•1/2 cup heavy cream
•1 tablespoon vodka (or more, depending on the day)
•red pepper flakes (as desired for spice)
•225 grams pasta (I used fusilli)
•1 tablespoon of butter (unsalted)
•1/4 cup of shredded parmesan cheese
•basil (chopped)
•salt to taste
•pepper to taste
•1/4 cup pasta water

How To:
Start to cook your pasta in boiling water with a dash of salt as you begin to make your sauce.

While your noodles cook: In your saucepan, heat up the olive oil, garlic and chopped onion over medium high heat. Once the garlic and onion are soft - add in your tomato paste, cook until the paste is a bit darker in colour.

Next, add in your heavy cream then add in the vodka. Cook until the vodka is evaporated.

Add in your red pepper flakes, until you’ve achieved the spice you desire (I probably did a little over 2 teaspoons).

Continue to stir until combined, season with salt and pepper to taste and remove from the heat.

Once your pasta is done to your liking, before you drain - save 1/4 cup of pasta water to add to the sauce.

Add butter, pasta and pasta water into the sauce in the saucepan and stir over medium heat til your butter is melted. Next, add in your parmesan cheese and continue to stir, season with more salt and pepper to taste.

Plate your pasta and top with more shredded parmesean cheese and chopped basil, serve & enjoy!
