Today I will show how to use floral or fruity tea to make amazing poached pears!
🧿🍐 Jasmine Tea-Poached Pears with Ginger & Lime 🍐🧿
• 3 cups water
• 5 tsp jasmine green tea leaves
• 1 small piece of ginger, peeled and thinly sliced
• Small vanilla bean, sliced
• ¼ cup white sugar
• Juice and zest of one lime
• 2 pears (of the firm kind, like Bartlett, Anjou, or Bosc), peeled, halved, cored, and middle spine removed. Keep stem.
To Finish:
• Vanilla ice cream
• Black sesame seeds
• Lime zest
1. Bring water to a boil. Add jasmine green tea. Cover and remove from heat. Let steep 3–5 minutes.
2. Strain brewed tea into a small saucepan. Add ginger, vanilla, sugar, and lime zest (hold the juice). Stir well until sugar dissolves.
3. Cover and bring to a boil. Lower heat and simmer for five minutes.
4. Arrange pear halves cut-side down in the syrup, all touching the bottom of the pan. Poach for 8–12 minutes, until tender but don’t overcook. Spoon frequently with poaching liquid and flip over halfway for even cooking.
5. Take the pears out carefully. Strain the liquid, return to pot, and further reduce to a thick syrup. Add lime juice and take off heat.
6. Place 1 or 2 pear halves in a bowl with a scoop of ice cream and spoon jasmine green tea syrup on top. Sprinkle with black sesame seeds and lime zest.
