Swahili coast gastronomy consists of food products brought by voyagers from Portugal, Arabia and India travelling to the Swahili Coast on their ancient dhows. Swahili people fused these readymade food products with readily available staple crops: fresh coconut, cassava, potatoes, bananas & yams and flavoured the food with readily available spices such as cloves, cardamom, ginger, nutmeg and pepper
in their cooking, creating authentic, mouthwatering dishes and delicacies with addictive & exotic flavours
One of those delicacies is Zanzibar Mix also known as 'Urojo' - Urojo is a mixture of smooth and tangy roux-like soup base cooked with lemon, with tiny cubes of potatoes & chickpeas in it. It goes with kachori, bhajias and coconut chutney and its top with a sprinkle of deep-fried fresh cassava shavings. The typical day in Swahili daily life in most Swahili Coast cities starts with a visit to a street vendor for a cup of ginger tea served with mandazi, especially in cold months. It ends with a trip to 'mama ntilie' or 'Nyama Choma' and Chipsi Mayai' street food vendor on your way home.
