Making tsoureki is a beautiful Greek Orthodox Easter tradition.
This year, I’m so excited to share a gluten-free version with my family and friends ❤️
The scent of mahlepi spice filling the kitchen takes me right back to my childhood watching my mom bake loaf after loaf.

My Most Recent GF Eats in Toronto

▪️Mandy’s – Quick Bite: The Habibi salad is perfect for a healthy, on-the-go meal.
◾️Pear– Asian Fusion: Salmon, fried rice, Pear salad + GF soy sauce. Servers were super knowledgeable.
▪️Petros 82 – Greek & Mediterranean: Grilled calamari with horta. Tons of naturally GF dishes and Greek-island vibes.
▪️STOK T.C – Italian inspired: Brussels sprouts, branzino, funghi assoluti + GF tiramisu (a must). Dedicated GF fryers. Staff is very knowledgeable.
▪️Amal – Lebanese/ Middle Eastern: Tabbouleh, chicken shawarma, grilled halloumi. Cocktails are a must!

Homemade hummus, topped with tomatoes, cucumbers, red onion, and olive oil. Fresh, bright, and ready to dip.
Ingredients:
1 can (15 oz / 398 ml) chickpeas, drained and rinsed
1/4 cup fresh lemon juice (about 1 large lemon)
1/4 cup well-stirred tahini
1 small garlic clove, minced (or more to taste)
2 tablespoons extra-virgin olive oil, plus more for serving
2 to 3 tablespoons cold water (adjust for texture)
Salt, to taste
Optional: pinch of paprika or sumac for garnish.
Top with chopped tomatoes, onions, cucumbers, kalamata olives, and drizzled with olive oil.

Instructions:
1. After draining and rinsing, place chickpeas on a clean kitchen towel. Gently rub them between your hands or fold the towel and roll them back and forth. The skins will loosen — discard them. This step makes the hummus extra smooth. You can skip this step if you don’t mind a more chunky hummus.
2. Add tahini and lemon juice to a food processor and blend for 1 minute until creamy and slightly thickened. This helps create a lighter texture.
3. Add garlic, cumin, salt, and olive oil. Blend again for 30 seconds.
4. Add the peeled chickpeas in two batches, processing for about 1 minute after each addition. Scrape down the sides as needed.
5. With the motor running, slowly drizzle in cold water, 1 tablespoon at a time, until smooth and creamy.
6. Adjust salt, lemon juice, or garlic to your liking. Spoon into a bowl, drizzle with olive oil, and garnish with paprika or herbs.
