Most people think throwing a chicken breast into a pan guarantees a tough, chewy result. It doesnāt. You just arenāt using the right chemistry.
Restaurants use a method called āVelvetingā to get that impossibly soft, bouncy texture. I use it as my baseline weeknight prep protocol.
Here is the exact algorithm:
šŖ 1. Mechanical Breakdown: Never slice parallel to the protein lines. Slice against the grain to shorten the muscle fibers.
š§ 2. Forced Hydration: Chicken is a sponge. Before cooking, add your spices (salt, garlic, MSG) and aggressively mix in 1-2 tablespoons of water. The meat will literally drink the liquid and turn glossy.
š§Ŗ 3. pH Alteration: A tiny pinch of baking soda raises the alkalinity on the surface, preventing the proteins from seizing up and pushing all that water back out in the pan.
