Here’s my high protein version of the classic French dish “gratin dauphinois” (scallop potatoes). Super easy and satisfying, best served hot with your favorite vegan meat.
What I used: (for 6 servings)
-1500g russet potatoes
-1 onion
-600g soft tofu (I use sunrise)
-35g fresh garlic
-30g nutritional yeast
-3 cups soy milk (again sunrise, locally made, delicious and nutritious)
-salt & nutmeg
Macros:
-18g protein
-62.8g carbs
-5.7g fat
