Hitohira Harima Forged
Here is another line we highly recommend for those looking to get into Japanese knives and carbon steel.
The Harima series is produced in Miki-Hyogo, Japan using Yasuki Blue (Aogami) #2 steel cladded with soft stainless steel and paired with a walnut handle and pakka wood ferrule.
This line features a rustic kurouchi finish that gives each knife a traditional look and plenty of character. The Blue #2 core steel offers excellent edge retention, is easy to sharpen, and is a favourite among many knife enthusiasts.
